Clams 500 gr Crispy flour 200 gr Eggs 1 piece Drinking water A little Common spices 10 gr (cooking oil/salt)

How to choose fresh and delicious clams

  • You should choose clams that are sandy yellow in color, with an unbroken outer shell, and you can observe a smooth and clear membrane inside.
  • Avoid buying clams that have a foul smell as they are dead.
  • Put the clams in a basin of water; if the clams stick their tongues out of the shell, they are still alive; otherwise, they are dead.

  • Prepare the clams

    After buying the clams, wash them thoroughly, soak them in diluted salt water for about 30 minutes, then rinse with water several times to ensure all sand is removed.

    Boil the clams with a little water and a little salt until the clam meat separates from the shell, then turn off the heat, rinse the clams in cold water, and remove the shells.

    Tip:

    You can clean the clams by soaking them in rice water and a few slices of chili for about 30 minutes to a few hours to allow the clams to expel the sand.

  • Mix the batter

    Add 200g of crispy frying flour, 1 egg, and a little salt into a bowl, stir well, then gradually add water until the batter is thick.

  • Fry the razor clams

    Heat a pan with hot oil on the stove, coat the clam meat with the batter and deep-fry them. Fry until the batter is evenly golden on all sides, then remove to drain the oil.
