How to Make Traditional Cat Tongue Cookies

  • Mix Butter and Sugar

    Put 100g of softened unsalted butter (not melted) and 110g of powdered sugar into a bowl. Use a whisk to mix until the mixture is well combined.

    Add about 1ml of vanilla and 1 egg white, then continue to mix well.

    Note: You shouldn’t add too much vanilla as it will make the cookies bitter.

  • Mix the Cookie Dough

    Divide the cookie dough into 3 parts, gradually add each part to the butter and sugar mixture, and mix until you achieve a thick and smooth consistency. Then, let the dough rest for 10 minutes.

    Line a plate with parchment paper and then start shaping the cookies.

    Put the dough mixture into a piping bag and pipe the dough into several lengths of about 3 finger joints. Note to leave a little space in between, as the cookies will expand more when baked.

    Preheat the air fryer at 180 degrees Celsius for 10 minutes, then place the cookies in to bake at 170 degrees Celsius for 15 minutes.

How to Make Matcha Cat’s Tongue Cookies

  • Mix butter with sugar

    Put 45g of unsalted butter and 40g of sugar into a bowl and mix well until the sugar is completely dissolved.

  • Mix the cookie dough

    In another bowl, add 41g of flour and 2g of matcha powder, then mix well. Next, gradually add the mixed flour into the butter and sugar bowl and mix until combined.

    When the flour and butter are well combined, add 1 egg white. Continue mixing until the mixture thickens and becomes smooth.

    Preheat the air fryer to 165 degrees Celsius for 5 minutes.

    Transfer the cake batter into a piping bag, then pipe the batter into lines about 2 – 3 finger lengths long onto parchment paper.

    Next, bake the cake for the first time at 165 degrees for 10 minutes, then lower the temperature to 160 degrees and continue baking for another 5 minutes to finish.

    The freshly made matcha cat tongue cake has a fragrant aroma, is thin, and when bitten into, it is crispy with a sweet and creamy taste, slightly bitter characteristic of matcha powder. You can enjoy the cake with unsweetened fresh milk for a better flavor!
