How to choose fresh and delicious pork trotters
- Choose a piece of pork trotter that is firm, with even meat fibers, the cut surface should be dry, and when pressed, the meat should have high elasticity.
- Opt for pieces of pork trotters that have a bright pink color, without any unusual colors, and the cut should have a natural, bright, dry color.
- The meat should not have a foul or fishy smell, without any unusual spots, and should feel firm, not slimy, and not bruised.
How to Prepare Braised Pig Trotters with Lemongrass and Chili

Prepare and Blanch the Pig Trotters
When you buy pig trotters, use a knife to scrape off any remaining hair (if any), then wash thoroughly with salted water and cut into bite-sized pieces.
To eliminate the unpleasant smell of the pig trotters, prepare a pot of boiling water and add the trotters, along with 1 teaspoon of salt and 2 chopped green onions, and blanch for 3 – 4 minutes over high heat, then remove and rinse again with water.
How to Remove the Smell from Pig Trotters
- Method 1: Use salt/vinegar/lemon/white alcohol to scrub the pig trotters, then use a razor blade to scrape off any dirt and remaining hair, and finally rinse with clean water.
- Method 2: Before cooking, blanch the pig trotters in boiling water for about 2 – 3 minutes, then rinse with cold water.
- Method 3: Singe the pig trotters to completely remove the coarse hair on the pig’s skin. It is advisable to use a mini gas torch for convenience and better flame control, to avoid burning the trotters.

Prepare other ingredients
Chop 1 stalk of lemongrass finely, and slice the remaining 2 stalks. Slice the chili.
Peel the shallots, smash them, and chop them finely. Wash the remaining green onions, chop them separately into the white and green parts.

Marinate the pork trotters
Marinate the pork trotters with the white part of green onions, chopped lemongrass, sliced chili, 1/2 tablespoon of seasoning, 1/3 tablespoon of monosodium glutamate, 1 tablespoon of sugar, 1 tablespoon of fish sauce, and 1 tablespoon of oyster sauce.
Use a spoon to mix well and let it marinate for 15 minutes for the pork trotters to absorb the flavors.

Stewed Pork Leg
Place a pan on the stove over medium heat, add 1 tablespoon of cooking oil, and 1 tablespoon of sugar into the pot, cook for about 2 minutes and stir well until it turns golden brown.
Next, add sliced lemongrass to fry until fragrant, then add the marinated pork leg and quickly stir-fry over high heat for about 5 minutes until the meat is firm and has a nice color.
Add the remaining marinade into the pot, reduce the heat, add 200ml of water and stew for about 1 to 1.5 hours without covering the lid so that the liquid reduces and absorbs into the meat.
Then, adjust the seasoning to taste, add 1/2 teaspoon of pepper and finely chopped green onions, and then turn off the heat.
Tip: To make the stewed pork leg more delicious, during the cooking process, if you see any foam, remember to skim it off. -
