How to Make Jackfruit Jelly with Coconut

  • Cooking the jelly

    Dissolve 2 packets of jelly powder in 2.6 liters of fresh coconut water and put it in a pot on the stove over high heat, stirring well to dissolve the jelly.

    Next, reduce the heat to low, add 400g of sugar, and stir continuously until the mixture thickens, then turn off the heat when it boils.

  • Blending Jackfruit and Coconut Meat

    Blend 200g of ripe jackfruit and 200g of fresh coconut meat using a blender.

    Tip: You should use young coconut to blend for the jelly, as the resulting product will be smoother, tastier, and without any chunks of coconut.

  • Mix jackfruit and grated coconut with jelly

    Divide the jelly liquid you just cooked into 2 parts, mix the blended jackfruit into 1 part, and the grated coconut into the remaining part. Gently stir each mixture until homogeneous.

    Pour into a 4-layer mold, alternating the 2 types of jelly that we have mixed, each time one layer of jelly sets, pour the second layer on top of the first. Repeat similarly until the last layer is completed!

    Tip:

    • The thickness of each layer depends on the thickness of the mold as well as personal preference!
    • While waiting for the jelly layer to set in order to pour a new layer, to avoid the jelly mixture still in the pot setting before you pour it into the mold, transfer the mixture to a bowl and place the bowl in a basin of hot water. Alternatively, you can leave the pot of jelly on the stove at the lowest heat.

    Once you have completed all 4 layers, place it in the refrigerator’s cool compartment and wait about 30 minutes for the jelly to fully set; when you press it, it should have a certain elasticity, indicating that the jelly is set.

  • Prepare the jackfruit

    Peel the jackfruit, use a knife to make a longitudinal cut to remove the seeds, then cut it into thin strands.

  • Cook the jelly

    Add 5g of jelly powder, 100g of sugar, and 500ml of filtered water into a pot, stir well to dissolve the mixture.

    Tip: To prevent the jelly from clumping, you should mix the jelly powder and sugar before dissolving in water.

    After the jelly mixture is dissolved, place the pot on the stove and cook over medium heat, making sure to stir continuously to avoid clumping.

    Cook for about 10 minutes until boiling, use a spoon to skim off the foam that rises to the top to keep the jelly clear and free of bubbles. Once the mixture is completely dissolved, adjust the sweetness and turn off the heat.

    To avoid burning the jelly at the bottom of the pot while cooking, you should lower the heat to low or medium.
