How to make Milk Tea Jelly

Brewing tea, straining tea
Put 100g of black tea into a bowl, add 700ml of boiling water, stir well for the tea to absorb the water, and cover tightly for 5 minutes. Next, place a thin cloth into the strainer, then pour the steeped tea through to extract the liquid.
Next, add 600ml of boiling water to the tea bowl, continue steeping the tea for another 5 minutes, and strain through the strainer. Then, replace with a new cloth and strain the tea one more time to finish.
Finally, add 15g of agar powder to the tea bowl, stir well, and soak for 30 – 60 minutes for the agar to bloom.

Cook coconut milk jelly water
First, stir 10g of agar with 500ml of water and soak for 30 – 60 minutes.
Place a pot on the stove, add the soaked agar mixture and 150g of rock sugar. Stir continuously over medium heat until the sugar dissolves and the water boils.
Next, reduce the heat to low and continue stirring for about 3 – 5 minutes until the agar completely dissolves. Add 220ml of unsweetened fresh milk and 100ml of coconut milk to the pot, stir well to combine, and it’s done.
Tip:
- You can check if the agar has dissolved by lifting the stirring utensil; if there are no tiny grains sticking to it, it’s ready.
- When adding coconut milk, you should not boil the mixture as it may cause the coconut milk to separate and harm health.
- Keep the pot of agar on the stove at the lowest heat, stirring occasionally to prevent the agar from setting.

Cook tea jelly water
Place a new pot on the stove, add the tea jelly water mixture and 300g of rock sugar. Stir well over medium heat until the sugar and agar dissolve.

Pouring into molds
First, pour about 2 ladles of tea jelly into the box and let it set on the surface.
Then, continue to add 2 ladles of milk jelly on top and wait for the jelly surface to set. Alternate adding these 2 layers until the box is nearly full.
You can also create a beautiful marbled jelly by pouring a thin layer of coconut milk jelly into the box, then adding 2 tablespoons of tea jelly, and using chopsticks to create swirls.
Wait for the jelly to almost set, then add 2 tablespoons of tea jelly, and pour a layer of coconut milk jelly on top. After that, continue using a spoon to create beautiful swirls.
Cover the boxes and store them in the refrigerator for about 1 hour to allow the jelly to set. Once set, take the jelly out, cut it into bite-sized pieces, and enjoy.
Tip: To prevent the jelly mixture in the pot from setting while waiting for the jelly surface to firm up, you can pour the jelly mixture into a bowl, then place this bowl into another bowl of hot water (boiling water). If the water in the bowl cools down, you should replace it with fresh water to keep the jelly warm. -

Tips for pouring jelly without separating layers and clumping
- There is a small tip to help the jelly cooked become crispier and not clump together, which is to mix the jelly powder with sugar first and then cook it with water.
- It is advisable to soak the jelly in water beforehand so that it expands and dissolves more easily when cooked.
- For multi-layered jelly, you should wait for the first layer to form a skin and become slightly firm on the surface before adding the second layer on top. Avoid adding the second layer while the first layer is still loose, as they will quickly blend together.
- Alternatively, if the jelly layer has completely set, you can poke holes evenly on the surface with a toothpick before pouring the next layer on.
