Ingredients for Danish butter and sugar bread For 8 pieces

All-purpose flour 160 gr Margarine 25 gr Instant yeast 1 teaspoon Unsweetened fresh milk 100 ml Powdered sugar 50 gr Salt 1/2 teaspoon Cooking oil 10 ml

What is instant yeast?

  • Yeast and instant yeast are types of dry yeast, fine granules, brown in color.
  • In terms of properties: yeast needs to be activated with warm water from 32 – 38 degrees Celsius before it can be used. But for instant yeast, you do not need to activate it and can mix it directly with the flour.
  • Additionally, instant yeast contains quite a bit more gas than regular yeast, so it can help the dough rise 50% faster, reducing the dough proofing time.
  • You can buy this type of yeast at baking supply stores, large supermarkets, or on e-commerce sites.

How to make Danish butter sugar bread

  • Mixing and proofing the dough

    First, add 100ml of unsweetened fresh milk, 1/2 teaspoon of salt, 20gr of powdered sugar, 10ml of cooking oil, and 1 teaspoon of instant yeast into the bowl, then stir well.

    Next, add 150gr of flour and use a spatula to mix until the ingredients are well combined, smooth, and elastic. Then, cover the bowl with a towel and let it rest for 20 minutes.

  • Kneading the dough and proofing the dough for the second time

    Place the dough on the table and use your hands to knead the dough using the Folding and Stretching technique.

    First, fold the dough over, then use the palm of your hand to press and stretch the dough away. Note that you should press and stretch the dough away, not press down. Next, rotate the dough by 90 degrees and repeat the two steps above for 15 minutes.

    Then, cover the dough tightly and proof for the second time for about 60 minutes until the dough doubles in size.

    How to identify if the dough is ready:

    • The dough is smooth and elastic.
    • The dough does not stick to your hands: When pressed, it feels slightly sticky, but when you lift your finger, the dough does not stick to your hands.
    • You can stretch the dough into a thin sheet without tearing.
    • Check the dough using the Windowpane test. Tear off a piece of dough and stretch it out. If the dough forms a thin membrane that is not easily torn and light can pass through, it is ready.

  • Making the butter sugar filling

    Put 20g of softened butter, 10g of powdered sugar, and 10g of flour into a bowl and mix well.

    Take the kneaded dough out onto the table and roll it flat, then spread the butter sugar mixture evenly on top. Next, fold the two edges of the dough towards the center and continue to roll it flat.

    Then, use a knife to cut the dough horizontally into several pieces about 4cm wide.

    For each piece of dough, cut it into 3 strands (do not cut all the way through) and then braid them in a twist style. After that, roll the dough into a round shape to finish.

    Finally, place the bread in a buttered mold, cover it tightly, and let it rise for the third time for about 40 minutes until it doubles in size.

  • Baking the bread

    Preheat the oven to 140 degrees Celsius for 10 minutes. Then, brush a layer of fresh milk on the surface of the bread and bake at 140 degrees Celsius for 20 minutes.
