  • Choose peas with a shiny skin, and when you break the stem, it should always be crispy. Do not choose peas with rough skin as those beans may not be good or could be shriveled.
  • After purchasing peas, you should store them whole in a sealed bag in the cool compartment of the refrigerator if not using immediately. When needed, just take them out, shell them, and prepare. With this storage method, you can keep peas for about 5 – 6 days.

How to choose fresh and delicious pork

  • You should choose fresh pork pieces that have a bright color, the desirable meat color will be light pink or light red, and the fat will have a translucent white color with a slightly creamy tone.
  • Good meat will have a characteristic aroma when sniffed, this smell is not unpleasant and does not have a strong fishy odor.
  • When you press on the piece of meat, it should be firm and elastic; after you remove your hand, the meat should return to its original shape, and there should be no indentations on the surface, indicating that it is fresh meat.
  • Avoid choosing pieces of meat that are mushy, slimy, or have a foul odor, as these are signs of low-quality meat that may be contaminated.

  • Prepare the pork

    After purchasing the pork, to reduce the unpleasant smell, you should rub a little salt directly onto the meat, then rinse thoroughly with clean water and let it drain. After that, put the meat on a cutting board and slice it into thin pieces suitable for eating.

    • Method 1: Before cooking the pork, blanch the meat in boiling water for about 3 minutes, then rinse the meat again with clean water before cooking it into delicious dishes.
    • Method 2: After cleaning the pork, put it into a pot of boiling water to blanch it for 2 – 3 minutes. While blanching the meat, add a peeled shallot cut in half to keep the meat’s fresh flavor.
    • Method 3: While preparing the water to boil the meat, you can add a little white wine, vinegar, ginger, or lemongrass to enhance the aroma, then blanch the meat for 2 – 3 minutes.

    For the peas you bought, remove the fibrous parts on both sides, soak in diluted salt water for about 10 minutes and rinse several times with clean water to drain in a colander. The peas are small so there is no need to cut them, you can stir-fry them whole!

    Peel the outer layers of the green onion and remove any wilted leaves. Then, separate the white part of the green onion and the green leaves.

    Pound the white part of the green onion in a mortar with 1/2 teaspoon of ground pepper until finely crushed. The green leaves will be combined with cilantro and cut into small pieces.

  • Stir-fry the peas

    Place a pan on the stove, add 2 tablespoons of cooking oil and heat over medium heat for about 1 – 2 minutes until the oil is hot, then add the crushed onion and pepper mixture to sauté for aroma. After that, add the sliced pork and stir-fry evenly for about 2 – 3 minutes.

    When the meat is just firm and has turned pink, continue to season with the following spices: 1 teaspoon of sugar, 1/2 tablespoon of sugar, 1/2 tablespoon of fish sauce, 1/2 teaspoon of seasoning powder, and a little salt. Stir well to ensure the meat absorbs the spices evenly.

    When the meat is cooked for a while, add the peas and stir-fry together for about 5 minutes over medium heat. When the peas are cooked, taste and adjust the seasoning to your family’s preference, then add the green onion and cilantro and turn off the heat.

    Note: You should not stir-fry the peas for too long as this will make them soft and lose their beautiful green color and crispness.
