How to choose good sticky rice
- Good sticky rice grains are those that are evenly sized and large. The outside is shiny, the grains are not broken, not powdered, and have a yellow color. They have a natural, characteristic aroma.
- The best type of sticky rice for making xôi is ngỗng sticky rice – it has long, large grains resembling small goose eggs, milky white in color, with a natural, lightly fragrant flavor. When cooked, it expands just right, is very sticky, soft, and fragrant. And especially, xôi remains deliciously sticky after cooling.
- If ngỗng sticky rice is not available, you can use other good types of sticky rice such as nếp nương, nếp nhung, nếp cái hoa vàng, or other types of sticky rice. However, depending on the type of sticky rice, the flavor of the xôi will vary.
How to choose good short ribs
- Fresh short ribs should have a light pink color, be elastic when pressed, and not smell rancid.
- Choose ribs with small, flat bones. This type of rib has more meat and less bone compared to larger, round ribs.
- For stewing, choose ribs that are lean with little or no fat for the best results. Accompanying cartilage will make your dish more delicious.

Soak the sticky rice
Rinse the sticky rice with water to remove dirt,
Then add about 300ml of clean water and soak the sticky rice for at least 4 hours or overnight if you have time.
After the sticky rice has softened, drain it through a sieve and let it dry.

Marinate the ribs
For the pork ribs you bought, soak them in diluted salt water for about 3 – 5 minutes and then rinse them clean, then let them drain.
How to clean pork ribs, odor-free
- Besides soaking the pork ribs in salt, you can blanch the bones for 1 minute and then discard this water.
- Next, put a few slices of ginger and a little white wine into another pot of water, bring it to a boil, then add the bones and boil for 5 minutes, turn off the heat, and remove the bones to rinse thoroughly.
Marinate the ribs with 1/2 tablespoon of soy sauce, 1/2 tablespoon of dark soy sauce, 1/2 tablespoon of oyster sauce, 1 teaspoon of seasoning powder, 1 teaspoon of sugar, 1/2 teaspoon of onion powder, 1/2 teaspoon of chili powder, 1/3 teaspoon of pepper, and 1/2 tablespoon of rice wine. Mix well, then cover with plastic wrap, place the bowl of ribs in the refrigerator, and marinate for about 1 hour.
Tip:
- Marinating the ribs with rice wine helps to eliminate the fishy smell and makes the ribs softer and tastier after cooking.
- You should marinate the ribs for at least 1 hour or you can marinate overnight for better flavor absorption.

Mix the sticky rice and ribs
Add the marinated ribs to a bowl along with the soaked sticky rice, then use your hands to mix them evenly.

Cook the sticky rice
Add water to the steamer and bring it to a boil.
Place a bamboo tray (bamboo basket) lined with banana leaves into the steamer. Add the mixed sticky rice and ribs into the tray, spread them evenly, then wrap with banana leaves. Cover and steam the sticky rice for about 30 – 40 minutes.
Tips to prevent sticky rice from being mushy or dry:
- Spread the sticky rice evenly to help it cook more uniformly during steaming.
- Use chopsticks to poke 3 – 4 large holes in the middle of the sticky rice to create air holes for steam to circulate evenly throughout the pot.
- The water in the lower pot of the steamer should occupy 1/3 of the pot’s volume to provide enough steam to soften the sticky rice grains.
After about 30 minutes, open the steamer lid, sprinkle 5g of chopped green onions on top, use chopsticks to stir evenly, then cover and steam for another 10 minutes before turning off the heat.

Serve the spicy ribs sticky rice on a plate, add 5 grams of finely chopped green onions and 10 grams of fried onions on top, and it’s ready to enjoy.
