How to choose fresh pork skin (pig skin)

  • Good pork skin should be chosen from the skin under the layer of tenderloin, lean shoulder meat, thick, flat skin pieces, and larger sizes will be easier to prepare. Avoid choosing belly skin as this part lacks firmness, the skin is thin and easily torn, and not crispy and delicious.
  • Bright pink skin, elastic, and without a foul smell indicates good pork skin.

How to choose delicious shiitake mushrooms

For dried shiitake mushrooms

You should choose the firm type, not broken, bright color, and without white mold spots. It is advisable to buy from reputable stores to ensure safety.

For fresh shiitake mushrooms

  • Choose those with bright colors, a characteristic fragrant smell, moderate caps, tightly closed, and slightly yellow-brown in color.
  • Select mushrooms with firm stems, uniform color; if the mushrooms have opened, the gills should appear in a neat, beautiful, and dry chain.
  • Avoid choosing mushrooms that are bruised, have a rancid smell, or are slimy. If you see mushrooms that are dark brown, do not buy them, as they may be poisonous.

How to choose dried wood ear mushrooms

  • Preferably choose wood ear mushrooms with large, thick caps and few small mushrooms at the base. The color of the mushrooms should be a dark amber, slightly shiny (for the top side) and coffee milk color (for the underside).
  • Avoid choosing black wood ear mushrooms that look too dark, as this type may become mushy when soaked in water and is less crispy.

How to choose delicious carrots

  • You should choose carrots that are straight in shape, have smooth skin, bright orange color, feel firm and heavy in hand, as these are the delicious ones, rich in vitamins.
  • You should buy those with a small core, as the smaller the core, the sweeter the carrot.
  • You should not choose carrots that have leaves or branches at the base, or have thick and heavy shoulders, as these are usually carrots with large cores, which are not sweet and have fewer nutrients.
  • Do not buy carrots that are misshapen, dark in color, bruised, or have withered leaves.

  • Prepare the ingredients

    First, soak the pig skin in diluted salt water for about 15 minutes, then scrape off the hair. After that, rinse it with clean water 2 – 3 times.

    Soak shiitake mushrooms and wood ear mushrooms in water for 10 – 15 minutes to let them expand, then remove the stems. Cut the shiitake mushrooms in half, while the wood ear mushrooms can be cut small or left whole as you prefer.

    Peel the carrots and cut them into strips about the width of one finger. Rinse the green peas and let them drain.

    • First, you need to soak the mushrooms in hot water at 60 – 80 degrees Celsius for about 7 – 10 minutes to let them expand.
    • Then gently rub them with your hands to remove any dirt and rinse with clean water to be ready for cooking.

    For fresh mushrooms

    • You can soak shiitake mushrooms in warm water for about 1 – 2 minutes to clean off any dirt and sawdust.
    • Then rinse with cold water and cut off the base of the mushrooms to help clean them.
    • Additionally, you can wash the mushrooms with rice water to remove the strong smell and help them retain their natural flavor.

  • Arrange the ingredients

    Spread the pork skin on the cutting board. Then, place a sufficient amount of raw pork paste on the piece of pork skin and use a spoon to spread it evenly.

    Next, sprinkle some green peas on top and press down gently.

    Then, layer the carrots, wood ear mushrooms, and shiitake mushrooms on top.

  • Roll and tie the pork

    After you have arranged all the ingredients on the piece of pork skin, roll it up tightly.

    Next, use string to wrap around the pork roll and tie it tightly.

  • Steam the meatloaf and slice it

    Place a pot of water on the stove over medium heat. When the water is gently boiling, put the meatloaf into the steamer and cover with a lid. Steam for about 30 minutes until the meatloaf is cooked, then turn off the heat and let it cool.

    Next, place the meatloaf in the refrigerator for about 1 hour to firm up.

    Finally, take the meatloaf out of the refrigerator and slice it into pieces suitable for eating.

    The outer layer is chewy and crispy, while the filling inside is crunchy from the wood ear mushrooms and carrots. You can prepare a small bowl of chili fish sauce for dipping to make the dish spicier and more appealing.
