How to choose fresh deer meat
- Real deer meat will have the same color both inside and outside the piece of meat. In addition, the texture of deer meat will be finer than that of beef, so be sure to note this for differentiation.
- You should not buy meat that is too cheap or unclear in origin, but rather purchase it from supermarkets or reputable stores.
- Do not buy meat that has turned brownish-black, has an unpleasant odor, or is slimy.
How to choose delicious dried wood ear mushrooms
- You should prioritize selecting mushrooms with large, thick caps and minimal small mushrooms at the base.
- Delicious mushrooms usually have a dark amber color, with a slightly shiny top and a coffee milk color on the underside.
- Avoid choosing mushrooms that look too black, as these may become mushy when soaked in water and are less crunchy.

How to prepare Stir-fried Deer Meat

Prepare mushrooms and vegetables
Soak 25g of dried wood ear mushrooms in a bowl of cold water for 1 hour until the mushrooms soften, then rinse them thoroughly with water. After that, cut off the mushroom stems and slice the wood ear mushrooms into bite-sized strips.
Proper way to soak wood ear mushrooms
- You only need to soak them in cold water until they expand, a maximum of about 3 hours. Soaking them too long will cause the toxic substances in the mushrooms to increase, especially the morpholine which appears more over time.
- Absolutely do not soak in hot water as hot water will stimulate the toxins in the wood ear mushrooms, leading to food poisoning.
- After soaking, remove them and rinse thoroughly with cold water.
Peel and cut the onion into wedges. Peel the shallots and slice them thinly.
Wash the lemongrass and finely chop it. Chop the coriander and Vietnamese coriander.

Prepare and marinate deer meat
To eliminate the odor, after purchasing, wash the deer meat with white wine and rub it with ginger. Then rinse several times with clean water and let it drain.
Next, cut the meat into thin slices that are easy to eat, then place it in a bowl.
Marinate the meat with 2 tablespoons of sugar, 1 teaspoon of salt, 2 teaspoons of seasoning powder, 1/2 teaspoon of pepper, 1 teaspoon of curry powder, 1 teaspoon of turmeric powder, 2 tablespoons of cooking oil, then mix well and marinate for about 15 minutes for the meat to absorb the spices.
Tip: Marinating the meat with cooking oil helps create a glossy finish and prevents the meat from drying out during cooking. Additionally, curry powder and turmeric will give the deer meat an appealing color and eliminate its odor.
Ways to eliminate the odor of deer meat
- Using white wine: Wash the deer meat clean, then rub it with white wine for about 5 minutes, then rinse with water again and let it drain.
- Using ginger: Lightly rub the piece of meat with crushed ginger and then rinse with water.
- Using vinegar: Dilute a little vinegar with 1 liter of filtered water, boil on the stove. Blanch the deer meat in this mixture until the water boils again, then remove it, rinse with water, and let it drain.

Stir-fried deer meat
Heat a pan on the stove with 3 tablespoons of cooking oil, then add all the chopped shallots and lemongrass, sautéing until fragrant over medium heat.
When the shallots begin to turn golden and fragrant, add about 1 teaspoon of curry powder to the pan and stir well.
Next, add all the marinated meat to the pan, stir-frying for about 10 minutes until the meat starts to firm up. Pour in about 100ml of coconut water, heat until boiling, then reduce the heat to low and continue to cook for about 10 – 15 minutes until the meat is tender.

Completion
After cooking for 15 minutes, add the wood ear mushrooms and 50ml of coconut milk to the pan, stirring well, increase the heat to medium, and cook for about 20 minutes.
Finally, add the onions, mix well, and cook for about 5 – 7 minutes until the onions are cooked and soft, then sprinkle with coriander and enjoy the dish.
Tip: Adding coconut milk later will help retain the creaminess of the dish.
