- Avoid lotus roots that have an unpleasant strange smell or are bruised and leaking water.

- For fresh lotus seeds, choose those that are round, uniform, about half the size of your fingertip, and have a slightly yellowish white color.

How to make Lotus Root Salad

Prepare the vegetables
First, peel the outer skin of the lotus root. To prevent the lotus root from browning during preparation, soak it in water mixed with lemon juice. Then, slice the lotus root into pieces about 1/2 finger thick.
For the lotus seeds, you can remove the core if you don’t want to eat bitter seeds, rinse them briefly and let them drain.
Next, wash the water celery and cut it into bite-sized pieces.
Wash the cucumber, carrot, and onion, then slice them into thin strips.
Tip:
- The knot of the lotus root is where the most nutrients are concentrated, so don’t discard that part!
- Do not use the cucumber’s inner part as it will release water, making the salad less tasty.

Cook the lotus root and lotus seeds
Put the lotus root in a pot and fill it with water. Place the pot on the stove and cook for about 5 minutes until boiling.
Then, cover the pot tightly and let the lotus root steam for about 30 minutes.
Next, add 100gr of lotus seeds to the pot and steam for 15 minutes. After that, remove and let it cool.

- To give the sauce a tangy flavor and more appealing taste, you should use green apples and apple cider vinegar for preparation. However, if it is inconvenient to buy these ingredients, you can still use red apples and regular vinegar for the dish.
- To suit your family’s taste, you can adjust the amount of sugar and vinegar added.
