How to choose fresh ingredients

  • Choose lotus roots that are moderately large and short as they will have better ripeness and flavor.
  • The exterior of the lotus root should be plump, with no unusual bumps or dents.
  • The skin of the lotus root should have a yellow color; avoid choosing lotus roots with white skin as they may have been chemically bleached.
  • Avoid lotus roots that have an unpleasant strange smell or are bruised and leaking water.

How to choose good lotus seeds

  • For fresh lotus seeds, choose those that are round, uniform, about half the size of your fingertip, and have a slightly yellowish white color.
  • You can check by pressing your finger into the lotus seed; if it still releases a little water when pressed, then it is fresh lotus seed.
  • Avoid choosing lotus seeds that are darkened or have wrinkled outer skins. Also, do not choose lotus seeds that are wet as they will easily darken and wilt.

How to choose fresh apples

  • Choose apples that are moderately round and feel firm in hand.
  • Sweet, juicy apples usually have bright colors, shiny skins, with small white specks on the skin; they feel smooth to the touch, not rough.
  • For the stem of the apple, choose those with a fresh stem that is tightly attached to the fruit.

How to make Lotus Root Salad

  • Prepare the vegetables

    First, peel the outer skin of the lotus root. To prevent the lotus root from browning during preparation, soak it in water mixed with lemon juice. Then, slice the lotus root into pieces about 1/2 finger thick.

    For the lotus seeds, you can remove the core if you don’t want to eat bitter seeds, rinse them briefly and let them drain.

    Next, wash the water celery and cut it into bite-sized pieces.

    Wash the cucumber, carrot, and onion, then slice them into thin strips.

    Tip:

    • The knot of the lotus root is where the most nutrients are concentrated, so don’t discard that part!
    • Do not use the cucumber’s inner part as it will release water, making the salad less tasty.

  • Cook the lotus root and lotus seeds

    Put the lotus root in a pot and fill it with water. Place the pot on the stove and cook for about 5 minutes until boiling.

    Then, cover the pot tightly and let the lotus root steam for about 30 minutes.

    Next, add 100gr of lotus seeds to the pot and steam for 15 minutes. After that, remove and let it cool.

    Tip: You can use the water from boiling the lotus root to drink, which is very refreshing and good for health.

  • Fry the tofu

    After washing and draining the white tofu, cut it in half to make frying easier.

    Heat a pan on the stove and add 2 tablespoons of cooking oil. Wait for the oil to heat up, then add the tofu to fry until golden on both sides. After that, remove it, let it drain, and cut it into small bite-sized pieces.

  • Prepare the sauce

    For the sauce, you need to prepare peeled shallots and slice the apples into wedge-shaped pieces.

    Add the apples and shallots to a blender along with 1 tablespoon of apple cider vinegar and 1 tablespoon of maltose. Additionally, add 200ml of water and 1/4 teaspoon of salt, blend the mixture until smooth, and transfer it to a bowl.

    Tip:

    • To give the sauce a tangy flavor and more appealing taste, you should use green apples and apple cider vinegar for preparation. However, if it is inconvenient to buy these ingredients, you can still use red apples and regular vinegar for the dish.
    • To suit your family’s taste, you can adjust the amount of sugar and vinegar added.

  • Make the salad

    Sequentially add the ingredients: lotus root, lotus seeds, cucumber, carrot, celery, onion, and fried tofu into the bowl.

    Then, drizzle the sauce over and mix the ingredients well, seasoning to taste.

    Finally, sprinkle sesame seeds and pepper on top.
