How to Make Taiwanese Pineapple Cake

  • Make the filling

    To save time on preparation, you can choose to buy pre-peeled pineapples. After purchasing, peel off any remaining eyes, remove the core, and wash thoroughly to drain.

    Next, chop the prepared pineapple finely. Then, place a pan on the stove, add the chopped pineapple along with 100g of sugar, and cook over medium heat for about 5 minutes until the pineapple mixture becomes sticky and cohesive.

    After that, transfer the cooked mixture to a plate and shape it into a long block. Next, wrap it with plastic wrap and place it in the refrigerator for about 30 minutes to complete the filling.

  • Make the dough

    In a bowl, add 2 eggs, 300g of all-purpose flour, 50g of condensed milk, 100g of brown sugar, 50ml of unsweetened milk, and 100g of unsalted butter. Then, mix all the ingredients evenly until they form a cohesive dough without lumps.

  • Shaping and baking the cake

    First, take a small amount of the dough based on the size of the filling you prepared earlier. Next, use a rolling pin or any available tool to roll out the dough very thin.

    Then, take the filling out of the plastic wrap and place it on the dough, rolling it up so that the filling does not bulge out. After that, cut it into small pieces about the length of a finger. You can also buy a cake mold or shape it as shown in the picture according to your preference!

    Preheat the oven to 150 degrees Celsius for 10 minutes. Finally, place the cakes in the oven and bake at 160 degrees for about 20 minutes until they are golden brown and done.
