How to choose fresh and delicious goby fish

  • Good goby fish has a moderate size, smooth and shiny skin, clear patterns, and has a certain transparency when viewed with the naked eye.
  • Additionally, when holding the fish, you can feel its firmness; the fish should be elastic and not soft or have a rotten smell.
  • Fish that have been stored for a long time will have a cloudy color, a bad smell, a soft and deformed body. Moreover, do not choose fish that are too large as they will not taste good.

How to process Dried Goby Fish

  • Prepare Goby Fish

    To save time on preparation, ask the seller to pre-process the fish.

    When you buy it, you just need to wash it with 1 bowl of alcohol and rub salt on the fish body, rinse several times with water and let it drain.

    How to prepare goby fish without a fishy smell
    • Method 1: Soak the fish in diluted salt water or rice washing water for about 15 minutes and then rinse clean, let it drain. For fish with a strong fishy smell, use coarse salt to rub thoroughly for about 3 minutes, then rinse well.
    • Method 2: To eliminate the fishy smell and make the fish cleaner, use lemon juice or vinegar to rub on the fish and then rinse it off.
    • Method 3: Another way to remove the fishy smell is to soak the fish in white wine for about 2 minutes after cleaning, then take the fish out and dry it with paper towels.

  • Marinate Goby Fish

    Marinate the fish with 3 spoons of chili powder, 3 spoons of sugar, 2 tablespoons of salt, and 2 tablespoons of filtered water.

    Stir well to dissolve the spices and wrap the fish with plastic wrap, letting it marinate for about 8 hours or overnight for the fish to absorb the spices.

  • Drying

    After letting the fish sit overnight, you pour out the marinade and let the fish dry. Arrange the fish on a tray or a bamboo basket and then dry the fish for 2 – 3 sunny days.

    Tip: To prevent the fish from spoiling and to make it more fragrant, after each sunny day, put the fish in a plastic bag and store it in the fridge overnight, then take it out to dry again the next day!

    Dried goby fish has an appealing color, and the fish is not too hard. You can fry or braise it, and it tastes great with hot steamed rice!

How to preserve dried goby fish

You place 1 – 2 fish on a sheet of paper, wrap the fish, put it in a plastic bag, and store it in the refrigerator’s cool compartment for 1 – 2 months, and in the freezer for about 6 months.
