How to choose fresh and delicious pork

  • For pork, choose parts that have a light pink color, fresh, with a hard outer skin and a moderate layer of fat, not too thick.
  • Choose meat that, when pressed, does not feel mushy, has a certain elasticity, and has a characteristic aroma.
  • Avoid buying meat with bruises, dark colors, overly thick or hard skin and fat.
  • Do not choose soft, strange-smelling meat. Because it may have been left too long or comes from old pigs, not fresh.
  • Additionally, you should use pork belly to make fried pork as the result will be tastier.

    Lemongrass should be washed clean, then sliced thinly into small rings.

    Add lemongrass and 4 chili peppers into a blender and blend until finely chopped.

    • If you don’t have a blender, you can pound or mince the lemongrass and chili using a mortar and pestle.
    • To suit your family’s taste, you should adjust the amount of chili added.

    Garlic should be peeled, washed, and sliced thinly along the length of the cloves.

    The pork should be washed clean and drained, then cut into pieces along the grain, about 2 finger widths wide.

    Tip:

    • Pounding the meat while it’s still warm will make it easier, and shredding it will also be quicker.
    • To prevent the meat from burning while making it dry, shred the meat a bit thicker, and avoid shredding it too thin.

  • Marinate the meat

    Prepare a marinade mixture consisting of: minced lemongrass and chili, 2 tablespoons of sugar, 2 tablespoons of fish sauce, 1 tablespoon of oyster sauce, 1/2 tablespoon of soy sauce, 1 teaspoon of monosodium glutamate, 1 teaspoon of annatto powder, 1/2 tablespoon of cooking oil, and 2 packets of five-spice powder, mix the seasoning mixture well.

    Add the prepared seasoning mixture to the shredded meat and mix well for the meat to absorb the flavors, marinate for about 2 hours for the spices to penetrate deeper!

  • Fry the garlic

    Place a pan on the stove, add 100ml of cooking oil and wait for the oil to heat up, then add the sliced garlic and sauté over medium heat until the garlic is evenly golden and fragrant, then turn off the heat and remove it to drain the oil.

    Note: To prevent the garlic from burning, when the garlic just turns golden and becomes fragrant, you should remove it immediately as the residual heat will continue to cook the garlic after it is taken out of the oil.

    Heat a pan on the stove, add the marinated meat and fry evenly over medium heat for about 1 hour until the meat is completely dry.
