How to Choose Fresh Pork Ribs

  • When selecting pork ribs, you need to pay attention to the shape, color, and smell of the ribs.
  • Fresh pork ribs usually have flat and small bones, bright pink meat, good elasticity, and a characteristic smell of ribs.
  • You should avoid choosing ribs with bones that are too large, as the meat on these ribs is often not much.
  • At the same time, you should also consider avoiding ribs that are too small. These may be ribs from pigs that have not reached slaughter age but were sick and therefore slaughtered.
  • Therefore, the taste and safety of the meat cannot be guaranteed.

How to Choose Fresh Duck Eggs

  • You can determine fresh duck eggs through two simple methods: observing the eggshell and shaking the egg.
  • Duck eggs of moderate size, thick shells, slightly mottled, and a thin layer of powder covering them are usually fresh eggs.
  • Another way to check the freshness of the egg is to hold the egg between your thumb and index finger. Then bring the egg close to your ear and shake it.
  • If you do not hear any sound coming from the egg, it is highly likely that it is fresh. If the sound from the egg ranges from faint to distinct, then it is an old egg or has gone bad.

How to cook Braised Pork Ribs

  • Prepare the pork ribs

    After purchasing, cut off the roots of the shallots and garlic, peel them, and rinse with clean water. Slice the shallots into thin pieces and set them aside in a bowl.

    Wash the pork ribs thoroughly after buying and cut them into bite-sized pieces.

    You can eliminate the unpleasant smell from the pork ribs by soaking them in cold water mixed with 2 tablespoons of salt for about 5 – 7 minutes to remove the remaining blood.

    After that, take them out and rinse with clean water, then let them drain and arrange them in a bowl.

    Ways to prepare pork ribs without unpleasant odors:

    • You can remove the smell of pork ribs by placing the pieces in a pot of cold water. Bring it to a boil for about 2 – 3 minutes, then turn off the heat. Quickly take the ribs out and rinse with clean water.
    • Another way to eliminate the unpleasant smell from the pork ribs is to drop 3 – 5 strands of straw into the pot of water containing the ribs. Then, blanch the ribs for about 2 – 3 minutes, take them out, and rinse clean.
    • Additionally, you can replace straw with other ingredients that have deodorizing effects such as ginger, lemongrass, vinegar, etc.

  • Marinate the ribs

    Add 3 teaspoons of fish sauce, 1 teaspoon of seasoning powder, and 2 teaspoons of sugar into the bowl with the ribs, then mix well.

    Next, let the ribs marinate for 30 minutes so that they absorb the flavors evenly.

  • Boil the duck eggs

    Place a pot on the stove with enough water to fill 1/4 of the pot. Then, put 10 duck eggs into the pot and turn on the stove to boil the eggs.

    Once you see the water boiling, continue to boil the eggs for another 10 minutes on high heat, then turn off the stove.

    Remove the eggs from the pot and proceed to peel them.

    You place another pot on the stove and pour all the fresh coconut water into the pot.

    Add 2 teaspoons of fish sauce, 1 teaspoon of seasoning powder along with 2 teaspoons of coloring sauce. Then, stir well.

    You place the eggs in the pot, turn on the stove, and cover it. Stew the eggs for 30 minutes so that they absorb the flavors and have a beautiful color.

  • Stir-frying ribs

    You place a pan on the stove, add 1 tablespoon of cooking oil, and then turn on the stove.

    When the oil is hot, you add shallots and garlic and stir well. After the ingredients turn golden and fragrant, you continue to add the pork ribs to the pan for stir-frying.

    While stir-frying, remember to turn the ribs so that they absorb the flavors evenly. When you see both sides of the ribs are just cooked, turn off the stove.

    Tip: At this step, you just need to stir-fry the ribs briefly before stewing so that the ribs firm up, render fat, and absorb the flavors. Moreover, this also helps you save time for stewing.

    You put the stir-fried pork ribs into a pot with duck eggs. Then, braise the ribs and eggs over high heat.

    During the braising process, make sure to frequently skim off the foam to ensure the broth is clear.

    Add 4 chili peppers to the pot to enhance the aroma of the braised ribs. After that, cover the pot and simmer over low heat for about 1 hour to make the ribs tender and allow the spices to soak in evenly.
