How to choose fresh and delicious pomfret

  • Fresh pomfret usually has clear eyes, pink gills, shiny scales, and skin without unusual colors, with a white anus that is retracted inside and a flat belly.
  • Additionally, when buying, you can observe the mouth and body of the fish to distinguish whether it is still fresh or not. If you see fish with closed mouths and, when pressed, the body has good elasticity and does not dent inwards, then those are fresh and delicious fish.
  • To buy the best pomfret, you should choose live fish that swim vigorously in the tank.
  • Avoid buying fish that show unusual signs such as bloating, swimming weakly, having a pale color, or having a fishy smell or a slight ammonia-like odor.

How to prepare Fish Salad with Lime

  • Prepare the grouper

    After buying the grouper, you scrape off the scales, remove the insides, fins, head, tail, and gills. Then, wash it clean and soak the fish in diluted white wine for about 5 minutes, then rinse it several times with clean water.

    Next, use a knife to fillet the fish meat from the body and cut it into thin slices suitable for eating.

    Ways to remove the fishy smell from grouper

    • Method 1: After cleaning, soak the fish in fresh milk for a few minutes and then proceed to cook it.
    • Method 2: Squeeze lemon juice into warm water, then soak the fish for about 5 – 7 minutes and rinse it clean with water.
    • Method 3: After cleaning, cut the fish into small pieces and soak them in rice water for about 15 – 20 minutes. Then take it out and rinse it clean again with water.
    • Method 4: Use salt to rub on the fish’s body, then scale it and proceed to clean the fish.

    Take 2 green onion stalks, wash them thoroughly, and use a knife to cut along the top of the onion into thin, beautiful slices.

    For the remaining 5 stalks of green onion, cut off 2/3 of the green tops, keeping only 1/3 of the length of the green onion attached to the stem, then use a knife to shred the green onion leaves, soaking them in cold water to create beautiful curled leaves.

    Remove the seeds from the chili and cut it into thin, bite-sized slices. Cut the lemon, squeezing the juice into a bowl.
