How to choose grated coconut for delicious coconut jam

  • To make the coconut jam tastier, you should choose grated coconut from medium-aged coconuts because this type will not be too young or too old, with just the right firmness and chewiness, making it very suitable for cooking.
  • The grated coconut from medium-aged coconuts will have a milky white color, not transparent or slightly cloudy, and if you press it with your fingernail, you will feel its crispness and it won’t be chewy.
  • Additionally, the medium-aged coconut has a light brown outer shell that is even in color and not blotchy. When you remove this shell, you will see the fibrous strands inside that are not completely smooth.
  • Avoid choosing grated coconut from very old coconuts because when making jam, it will become hard, and if too young, it won’t make good jam.

How to choose fresh, beautiful pandan leaves

  • When buying pandan leaves, you should choose large, long leaves that are dark green because when used, you will obtain more dark green juice and fragrance.
  • Avoid purchasing leaves that are too small, too light in color, or show signs of wilting, pest damage, or insect bites.

How to make pandan coconut jam

  • Prepare the coconut meat

    The medium-grain coconut meat, when purchased, should be washed thoroughly with water, and then shredded into thin strands suitable for eating.

    To extract all the oil from the coconut, during the shredding process, you will soak the coconut in a bowl of clean water and wash it an additional 5 – 6 times to ensure cleanliness.

    Next, you will boil about 500ml of water, place the shredded coconut in the bowl and pour the boiling water over it to soak for about 15 minutes to release all the coconut oil.

    Finally, scoop the coconut meat out and rinse it again with clean water, then place it in a basket to drain.

  • Prepare pandan leaves

    Wash the pandan leaves with water, drain them, and then cut them into small pieces.

    Then add the pandan leaves along with 1 cup (rice bowl) of water into a blender and blend at medium speed for about 3 minutes.

    After blending, strain the pandan mixture through a sieve to extract the pure extract.

  • Mix the coconut jam with pandan leaves

    Put the prepared coconut meat into a large bowl, add 100g of condensed milk, 300g of palm sugar, pandan extract, and stir well to combine the mixture.

    Cover the pot of coconut and let it soak for about 3 hours for the coconut meat to absorb the sugar and pandan leaves!

  • Making pandan coconut jam

    Put a pan on the stove, add all the soaked coconut meat after 3 hours, and cook over high heat until the coconut starts to boil, then reduce to medium heat and stir the mixture every 10 minutes.

    Stir until the coconut starts to thicken, then continue stirring continuously to prevent burning until the coconut is dry and a layer of sugar coats each strand of coconut, then you can turn off the heat!

    • After cooking the coconut into jam, use a fan to blow directly at the pan of coconut jam and stir continuously until the coconut cools down; at that point, you can eat the coconut jam right away.
    • You can also spread the coconut jam out on a tray, evenly distribute the jam, and cool it in front of a fan for about 30 minutes to complete.
