Prepare and blend jackfruit
First, carefully peel off the fibers and seeds of the jackfruit. Next, use scissors to cut the jackfruit into smaller pieces for easier blending. After cutting, put it in a mortar, add about 500ml of filtered water, and blend this mixture until smooth.
After blending, pour it into a pot, put it on the stove, and boil for about 2 minutes, then turn off the heat.

Mix the jackfruit and milk mixture
Pour 390ml of condensed milk into a bowl. After the jackfruit water boils, pour it together with the condensed milk, stir well, then add 440ml of unsweetened fresh milk, and continue stirring.
After this mixture cools down to about 35 – 40 degrees Celsius, add 200gr of yogurt, and stir gently to completely dissolve the ingredients together.
Note: You should not add yogurt when the milk mixture is too hot as it will kill the yeast and the fermentation will not succeed! -
Pouring and Incubating Yogurt
After this mixture is smooth and cool, you gradually pour the yogurt into the prepared molds. Once completed, cover it, place it in an insulated container, pour warm water up to about 2/3 of the molds, and then incubate the yogurt for 8 – 10 hours.

Prepare the jackfruit
Use 200gr of jackfruit, after purchasing, separate the jackfruit segments, remove the skin, seeds, and peel. Then, place the jackfruit flesh on a cutting board and dice it.

Cook yogurt
Add 150ml of filtered water to the pot, place the pot on the stove and boil over medium heat for about 2 minutes until the water boils, then add 1/2 can of condensed milk along with 220ml of sweetened fresh milk.
Stir the mixture in the pot until the condensed milk is fully dissolved and continue to cook over low heat, stirring constantly until the mixture heats up to about 50 – 60 degrees Celsius, then turn off the heat.
Add the diced jackfruit and let it cool to about 40 degrees Celsius. Then, open a jar of yogurt, use a spoon to stir the starter yogurt in the jar to loosen it, then wait for the milk mixture in the pot to cool. Add the loosened starter yogurt and mix well.

Yogurt incubation
Pour the yogurt into a jar, seal tightly and place the jars in a closed container along with a little boiling water that covers 1/2 of the jar’s body, then use a towel that has been dampened with hot water to cover the surface of the yogurt, then seal the container tightly and incubate for 12 hours.
After incubating the yogurt for 12 hours, place the yogurt in the refrigerator for about 4 – 5 hours before enjoying.
