Stingray 700 gr Crispy flour 150 gr Shallots 2 bulbs Tapioca starch 3 teaspoons Oyster sauce 1 teaspoon Cooking oil 250 ml Chili sauce a little Common seasoning a little (Pepper/ sugar/ salt/ seasoning powder)

How to choose fresh and delicious stingray

  • You should choose stingrays that swim vigorously. Weakly swimming stingrays are old, their meat will not be tasty and they are more likely to convert acid.

  • Fresh stingray has moderately pink flesh, not too dark or too pale, and has good elasticity.

  • Avoid buying stingrays whose flesh is slightly soft and mushy, and have an overly strong fishy smell, as these are dead fish.

  • Prepare the stingray

    After purchasing the stingray, wash it thoroughly with diluted salt water. Next, rub some salt onto the flesh of the fish and rinse with water 2 to 3 times, then let it drain. After that, cut it into bite-sized pieces.

    Peel the shallots, slice them, and then chop them finely.

    How to prepare stingray to reduce fishy smell and avoid spoilage

    • When preparing the stingray, you must follow these steps: remove the gills, discard any blood clots inside, wash off the slime, and remove the internal organs.

    • Use a knife to make a cut along the backbone of the fish to remove all the bruised flesh and the black membrane. Then rub salt and wash the belly of the fish to eliminate the fishy smell. You can use white wine or vinegar for cleaning.

    • The skin of the stingray is very slimy, which can make it difficult to scrape off the slime. To handle this, you can rinse the skin with boiling water and then use a knife to scrape off the slime from the tail to the head. As you scrape, rub salt on the area.

    • After that, wash the fish thoroughly with ginger, white wine, or vinegar to completely eliminate the fishy smell. Finally, rinse the fish with clean water and let it drain.

  • Marinate the fish

    Place the stingray in a bowl, marinated with minced shallots, 1 teaspoon of oyster sauce, 1 teaspoon of seasoning powder, 1/2 teaspoon of salt, 1 teaspoon of pepper, 1 teaspoon of sugar, and 3 teaspoons of tapioca flour, then mix well and marinate for 10 minutes to let the fish absorb the flavors.

  • Mix the batter

    Add 150g of frying flour to a plate, then add 160ml of water and stir until the flour is dissolved and smooth.

    Tip: Depending on your preference, you can add an egg to the batter to enhance the flavor of the dish.

  • Fried Fish

    Place a pan on the stove, add 250ml of cooking oil to the pan, and turn the heat to medium to heat the oil.

    While waiting for the oil to heat, take the marinated fish and dip it in the batter so that the batter evenly coats the fish.

    When the oil is hot, add the fish and fry until one side is golden brown, then flip it to fry the other side. Once the fish is golden brown, remove it from the oil and let it drain.

    Tip:

    • Fry the fish over medium-low heat to ensure even cooking. Only flip it after one side is cooked to avoid breaking the fish by flipping too much.

    • Place the fish on a plate or use a fork lined with a layer of paper towel to help reduce the oil, making it less greasy.

    Arrange the fish on a plate, spray a little chili sauce on top, and the dish is complete.
