  • For dried jackfruit dishes, you should choose ripe, golden jackfruit, not overly soft jackfruit as it will affect the quality of the dish.
  • To choose delicious jackfruit, you can taste a little. Ripe, delicious jackfruit will have a sweet and rich flavor, not fibrous or strange-tasting.
  • Good ripe jackfruit usually feels heavy in hand. Ripe jackfruit has a fragrant and distinctive smell. Jackfruit that has been injected with chemicals often does not smell as good as naturally ripened jackfruit.
  • Good ripe jackfruit usually has a brownish-yellow skin, the spikes are no longer sharp and the distance between the spikes is usually far apart. If the jackfruit has green skin, sharp spikes, and the spikes are close together, it is still unripe and artificially ripened.
  • Good naturally ripened jackfruit will have little sap and no white sap when cut open. When jackfruit is injected with chemicals, the sap will be white and flow a lot when cutting due to the effects of the chemicals.

    After buying jackfruit, remove all the skin and seeds inside, you can keep the large and ripe jackfruit fibers.

    Cut the jackfruit segments in half to make it easier to fry and prevent the jackfruit from becoming mushy, do not cut them too small.

  • Mix the batter

    Put all the flour and cornstarch into a large bowl. Add 1 tablespoon of sugar and 1/2 tablespoon of salt and mix well.

    Next, add 3 tablespoons of coconut milk and crack in 1 egg. Use a whisk to mix the mixture thoroughly.

    Add about 100ml of filtered water and continue to beat until the mixture thickens, then let the batter rest for about 10 – 15 minutes.

    Place a pot on the stove and add enough oil so that it is about 1/3 – 2/3 full, then heat it until boiling; the oil should be enough to submerge the jackfruit pieces.

    Dip each piece of chopped jackfruit into the batter, depending on your taste, you can adjust the amount of batter for a crispy or less crispy texture.

How to separate jackfruit segments without getting sap on your hands and knife

Avoid jackfruit sap sticking to your hands

  • First, you can apply a little cooking oil to the palms of your hands before cutting or separating the jackfruit segments. This method will help reduce the stickiness of the jackfruit sap on your hands.
  • You can also dip your hands in rice before and after cutting the jackfruit or separating the segments. Rice bran will help wash away the sticky jackfruit sap on your hands.
  • Additionally, you can use a lemon to rub on the cut jackfruit and your hands or knife; this method is also very effective.
  • Other folk methods include using kerosene to wash off jackfruit sap or chewing some raw peanuts and applying them to the sticky sap to remove it.

Avoid sap sticking to the knife

  • You can cool the knife in the freezer refrigerator, this will prevent jackfruit sap from sticking to the knife and make the sap residue hard and easy to peel off.
  • Additionally, you can use a plastic bag to remove jackfruit sap or use a cloth soaked in oil (cooking oil, kerosene,…) to wipe the sticky sap off the knife.
