  • Firm and elastic pork is good meat. You can test by pressing your finger into the meat; if it bounces back immediately, is not slimy, and does not leak water or juice, it is good.
    You should choose pork that has a balance of lean meat and fat so that your dish does not become dry or too greasy.

  • There are 2 types of mushrooms: fresh mushrooms and dried mushrooms, you should choose to buy dried mushrooms for safety and to minimize the risk of allergies!
  • Dried mushrooms will have an amber color on the top, and a milky brown color on the bottom; when buying, prioritize those with large, thick mushroom ears and few small mushrooms growing at the base.
  • Avoid choosing mushrooms that have an unusually dark color; these mushrooms will easily become mushy after soaking and will no longer be crispy and delicious.

How to make Fried Bao

  • Mix and knead the dough

    Add 130g of all-purpose flour to a bowl, then add a little salt and 1g of baking powder, mix the mixture well.

    In another bowl, add 20g of sugar, 1.5g of yeast, 80ml of fresh milk, and 15ml of cooking oil, then mix the mixture well.

    Next, add the milk-yeast mixture into the flour mixture, and mix well until the flour absorbs all the liquid.

    Then, let the dough rest for about 15 minutes and gently knead until smooth. Finally, cover the dough tightly and let it rise for about 1 – 1.5 hours in a warm place.

    Note: You should not knead the dough too long as it will make the bao dough tough!

  • Make the filling

    Soak the mushrooms in water for about 10 minutes to soften, then rinse and chop finely.

    Peel and wash the carrot, then cut it into thin strips. Wash the cabbage and then chop it finely. Peel the shallots and then mince them.

    In a bowl, combine: 50g ground pork, 50g pork sausage, chopped mushrooms, carrot, and cabbage along with 2 tablespoons of oyster sauce, 1 tablespoon of seasoning, 1/2 tablespoon of sugar, 1/4 tablespoon of MSG, and a little pepper, then mix the mixture thoroughly.

    Next, heat a pan on the stove with 1 tablespoon of cooking oil, wait for the oil to heat up, then add the minced shallots to sauté until fragrant, then add the mixed filling and stir-fry over medium heat until cooked, then turn off the heat and let it cool.

    Boil 2 eggs until cooked, then peel and cut into wedges.

  • Wrapping the dumplings

    The dough has risen for enough time, take it out, knead it gently, and then divide the dough into 8 equal parts.

    Next, use a rolling pin to roll each divided portion of the dough into very thin pieces, then scoop a little filling that you have stir-fried into it, add a piece of egg on top, and then gently wrap the dumpling. Do the same for the remaining filling and dough!

    Tip: To make the fried dumplings delicious, you must wrap the dumpling tightly so that the filling doesn’t fall out when frying!

    Heat a pan on the stove, add 200ml of cooking oil, and turn on medium heat until the oil is slightly bubbling, then add the dumplings to fry. Turn the dumplings evenly until they are golden and crispy, then remove them and let them drain the oil, and you can enjoy them!
