What is all-purpose flour?
- All-purpose flour is made from soft winter wheat and hard spring wheat, containing a protein content of about 10 – 12%.

How to make Fried Milk Buns

Mixing and Proofing the Dough
First, add 200g of all-purpose flour into a bowl, create 3 holes on the surface of the flour, and sequentially add 15g of sugar, 1 teaspoon of instant yeast, and 2g of teaspoon of salt into each hole.
Mix all the ingredients together, then add 100ml of unsweetened fresh milk and mix until the dough is sticky, then add 1 teaspoon of cooking oil and knead with your hands.
Knead the dough thoroughly for 10 minutes until it forms a smooth and non-sticky mass. After that, place the dough in a bowl, cover it tightly, and let it proof for 1 hour and 30 minutes.

Rolling the dough and shaping
After the dough has risen to double its size, take it out and roll it thinly into a rectangle. Then brush a thin layer of cooking oil on the surface of the dough.
Next, roll the dough horizontally into a long log. Use two fingers to pinch the outer edge tightly so that it sticks together and does not unravel.
Use a knife to cut the dough into equal small pieces and place them on a tray, letting them rise at room temperature for 30 minutes. After that, put them in the freezer refrigerator to freeze for 10 – 15 minutes.

Frying the buns
Prepare a frying pan with oil, place it on the stove over high heat, when the oil is hot, lower to medium heat. Add the buns to fry them submerged in oil so they cook slowly from the inside.
Continuously flip the buns to ensure they are evenly golden. When you see the buns turn a uniform golden brown on all sides, take them out and skewer the buns onto sticks to finish!
