How to make Passion Fruit Cookies without baking

Mash the butter mixture
Put 110gr of unsalted butter and 30gr of powdered sugar into a bowl, then use a flat whisk to mash the mixture until smooth.
Next, add 1 egg yolk, a little grated lemon zest, and mix well.
Tip: The butter should be softened at room temperature; when pressed with your hand, it should be soft enough but not too mushy or watery. -
Mix the dough
Sift 165g of flour into the bowl of butter, then use your hands to knead the dough until it forms a smooth and elastic ball.

Shape the dough
Divide the dough into equal portions and roll them into balls.
Next, use your thumb to press into the center of each ball to create a dent.

Make the passion fruit jam
Add 30g of concentrated passion fruit, 25g of egg, 20g of lemon juice, 10g of powdered sugar, and 35g of unsalted melted butter into a bowl and mix well.
Note: If you are using fresh passion fruit, you do not need to add extra lemon juice, but you should add a little sugar to achieve a sweet and sour taste.Boil a pot of water and then turn off the heat, then place the bowl of passion fruit on top and stir continuously until the mixture thickens.
Finally, spread the passion fruit jam on top of the cake.
Tip: You can check by dipping a spoon into the sauce, and using your finger to swipe in the middle. If the two sides of the sauce remain intact and do not flow, it means the sauce is ready. -
Baking the cake
Fill a pan with salt, cover it tightly, and heat it up.
When the salt in the pan heats up, place the baking tray inside, cover it tightly, and bake over medium heat for 15 minutes until the cake turns slightly golden brown.
