How to Make Mini Baked Apple Pie
-
Mix the Pie Dough
Add 97ml of cold ice water, 3gr of salt, and 5gr of sugar into a glass and stir well.
In a bowl, add 110gr of type 8 flour, 110gr of type 13 flour, and 95gr of cold unsalted butter. Use a spoon or a piece of plastic to crush the butter with the flour.
Then, pour the initial mixture of cold ice water into the bowl and continue to mix until the dough holds together.
Finally, spread the dough into a square shape onto a layer of plastic wrap, wrap it tightly, and let it rest in the refrigerator for 30 minutes.
Note: When making puff pastry, you need to keep the butter cold and use cold water. This method will maintain the structure of the pastry, making it more stable and crisp after baking. -
Creating the flaky pastry shell
First rolling:
Use a rolling pin to flatten the dough into a square shape, then use a knife to make 4 cuts at the corners to create a smaller square in the center.
Next, evenly spread 20g of unsalted butter on the small square and fold the 4 edges of the dough inwards.
Roll the dough out into a rectangle, fold it in half, and then roll it out 3 more times.
Finally, wrap the dough tightly in plastic wrap and let it rest in the refrigerator for 1 hour.
Second rolling:
Take the dough out of the fridge, roll it out into a rectangle, then divide the dough into 3 parts and fold it neatly.
Continue rolling the dough into a rectangle, evenly spread 20g of unsalted butter on the surface, then fold it neatly. Wrap the dough tightly and let it rest for another hour in the fridge.
Third rolling:
Roll the dough out into a rectangle, fold it into thirds, and then roll it out again.
After that, evenly spread 20g of unsalted butter on the piece of dough, fold it neatly, wrap it tightly, and let it rest for 1 hour in the fridge.
Fourth rolling:
Take the dough out, roll and fold it 2 more times, then wrap it tightly and place it in the fridge for 1 hour.
-
Cut apple
Cut the apple in half, remove the core, and then cut it into several pieces with a thickness of 4 – 5mm.
-
Marinate apple
Put the cut apple into a bowl, add 30g of sugar, a little cinnamon powder, the juice of 1 lemon, 10ml of rum, and 20g of unsalted butter.
Next, cover the bowl tightly with plastic wrap and microwave for 7 – 8 minutes.
Pour the liquid in the bowl evenly over the apple pieces, cover tightly, and marinate at room temperature for at least 5 hours.
-
Shape the cake
Use a pen to draw on the cardboard the shape of an apple, the apple stem, and the apple leaf. Then, use scissors to cut this part out.
Roll out the dough to a thickness of 3mm, then place the shaped cardboard piece on top and cut with a knife.
Prepare a baking tray lined with parchment paper, and arrange the dough pieces together to form a complete apple shape.
Next, press your hand into the center of the apple shape to create a dent, then use a fork to poke evenly on top.
Mix a bit of apple jam with the apple soaking water from Step 4, then spread it evenly on the center of the dough piece.
Finally, arrange the fresh apple slices on top to complete.
-
Bake the cake
Preheat the oven to 205 degrees Celsius for 15 minutes.
Mix 1 egg yolk with 5ml of fresh milk and brush it evenly over the outer edge of the dough.
Then, bake the cake at 195 degrees Celsius for 15 minutes to finish.
