- Fresh and delicious shrimp will have an intact, firm shell and a translucent color. Additionally, the head and legs of the shrimp will be tightly attached to the body, not loose.
- Choose shrimp with a slightly curved body, firm flesh, and a tail that is neatly folded together.
- Do not buy shrimp with tails that are spread out and not neatly folded together, as these may be shrimp that were caught a long time ago or have been soaked in preservatives.
How to choose good taro
- Size: Choose tubers that are medium-sized, not too large or too small.
- Shape: Choose those that are round and egg-shaped, with a rough skin, plenty of roots, and dirt sticking to the skin.
- Color: Choose taro that has a milky white interior with many purple veins.
How to make Taro Shrimp Cakes

Mix the shrimp cake batter
Put 150g of flour and 2 tablespoons of baking powder into a bowl and mix well.
Then, add 70g of rice flour, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, 1 teaspoon of sugar, 1/2 teaspoon of monosodium glutamate, and 375ml of unsweetened soda water.
Stir the mixture well to combine, cover tightly with cling film, and let it rest in the refrigerator for 5 – 8 hours.
After resting, add 2 tablespoons of melted butter and a little pepper to the batter and stir well.

Marinate the shrimp
Remove the black vein from the shrimp, then wash them clean and let them drain.
Next, put the shrimp in a bowl along with 1/2 teaspoon of sugar, 1/4 teaspoon of salt, 1 teaspoon of seasoning powder, a little pepper, 1/2 tablespoon of minced shallots, and 1/2 teaspoon of minced garlic and chili.
Mix the shrimp well and marinate for 15 minutes to absorb the seasonings.

Peel the taro and wash it clean, then shred the taro into small strands.
Next, add 1/2 teaspoon of sugar, 1/4 teaspoon of salt, 1/2 teaspoon of seasoning powder, and a little pepper to the bowl of taro. Mix the ingredients well and marinate for 5 minutes.

Heat the oil in a pan until it is gently boiling.
Put a little taro on a ladle, drizzle some flour on top, place a shrimp on it, and then drop it into the hot oil. Fry and turn the cake evenly over medium heat for about 5 minutes until the taro is golden and crispy, and the shrimp is cooked.
Tip:
- If you don’t have a mold, you can use a ladle as a mold.
- If you want the cake to be crispier, you can fry it twice.
- Do not add too much flour as it may become overwhelming to eat; just use enough for the taro and shrimp to stick together.

Add 1 tablespoon of sugar and 200ml of water into a bowl, then stir until the sugar dissolves.
