  • It should feel firm to the touch, with good elasticity. If pressed, it should leave a dent but return to its original state immediately, indicating the salmon is still fresh.
  • Moreover, choose fish with a natural fishy smell, avoiding any strong or foul odors.
  • Avoid choosing fish that have dark, dull colors or show tiny brown spots on the surface, as this indicates the fish has gone bad and is no longer usable.

  • Fresh asparagus always has a bright green color without turning yellow, the stalks are straight and firm. When held, it feels sturdy, not too soft.
  • The tips should not be bent and have a dark green or light purple color; additionally, they should appear dense and not faded.
  • Avoid choosing asparagus that has many scratches or small spots on the surface or is too soft and mushy. Especially if the asparagus has flowered, it should not be used anymore.

  • Prepare the salmon

    Wash the salmon thoroughly, soak it in diluted saltwater for 10 minutes, then rinse it with clean water and drain.

    Use a knife to cut the salmon into bite-sized pieces.

    Tip: To ensure the dish remains intact and not broken after preparation, do not cut the salmon too small.

    Effective methods to eliminate the fishy smell of salmon

    • Method 1: Soak the salmon in white wine and minced ginger for 7 – 10 minutes.
    • Method 2: Another common method to effectively eliminate the smell is to soak the fish in milk for 10 minutes.
    • Method 3: You can also use a mixture of lemon juice and diluted saltwater, and soak the salmon for 30 – 60 seconds to immediately remove the fishy smell.

  • Prepare other ingredients

    Wash the asparagus and use a knife to cut off the ends, then cut it into bite-sized pieces.

    Remove the roots from the green onions, peel the ginger, and wash the dill and horn chili, then cut them into pieces. For the bird’s eye chili, crush 2 pieces.

    Then, place all the ingredients except asparagus into a mortar and pound them into a paste.

  • Cook the sauce

    Place a pan on the stove and add the pounded ingredients, 1.5 tablespoons of sugar, 1 teaspoon of monosodium glutamate, 4 tablespoons of soy sauce, and 4 tablespoons of water, stirring well for 5 minutes over medium heat.

    When the mixture starts to boil and the aroma begins to waft, turn off the heat and pour it into a bowl.

  • Fry the fish

    Take a different pan and place it on the stove with 2 tablespoons of annatto oil over medium heat.

    • To prevent the salmon from breaking, turn it gently.
    • To avoid burning the fish, do not fry over high heat.
    • Salmon cooks very quickly and only needs to be fried just enough to firm up the flesh, so do not fry for too long.
    • You can replace annatto oil with cooking oil; however, using annatto oil will give the fish a more appealing golden color.

  • Stir-fry asparagus

    Using the same pan that you fried the fish, continue to add the asparagus and stir-fry over medium heat for about 5 – 7 minutes.

    When the asparagus starts to smell fragrant, turn off the heat and transfer it to another plate.

  • Braised Fish

    Place another pot on the stove with salmon and the sauce mixture, and braise over high heat for 10 – 15 minutes.

    Once the fish starts to boil, reduce to medium heat, add 2 chili peppers and the asparagus, and braise for an additional 5 – 7 minutes.

    When the sauce thickens, season it to taste, add the dill, and then turn off the heat.
