How to Choose Fresh Salmon Heads
- Choose salmon heads that have a slightly green and shiny color, with the flesh inside being a natural pink-orange, and clear eyes.
- If the salmon’s eyes are cloudy, do not choose this head as it indicates the fish is no longer fresh.
- Preferably choose Sa Pa salmon heads or Norwegian salmon heads as they will have sweet, fatty meat and a distinct yellow color.
How to prepare Salmon Head with Pepper

Prepare and marinate the fish
Wash the fish head with diluted salt water, then rinse thoroughly with clean water and let it drain.
Marinate the fish with 1 minced shallot, 1 tablespoon of pepper, 1 teaspoon of seasoning powder, and 1/2 teaspoon of monosodium glutamate, then let it sit for 15 minutes for the fish head to absorb the spices.
How to clean salmon heads, without fishy smell:
- Method 1: To eliminate the fishy smell, you can rinse the salmon head with diluted salt water.
- Method 2: You can soak the fish in a mixture of white wine and vinegar for 5 minutes, then take it out and rinse it thoroughly with clean water.

Prepare the fish sauce
