Choosing good shiitake mushrooms (shiitake):
- For fresh mushrooms, it is best to buy those with bright colors, a characteristic aroma, and avoid choosing bruised mushrooms with a rotten smell. If the cut emits a milky white substance, it is a sign of poisonous mushrooms. Avoid mushrooms with dark spots or wrinkles on the cap, and do not choose slimy mushrooms. Fresh mushrooms will have a thin, paper-like coating on them. Choose mushrooms with a sturdy stem, uniform color, and if the mushrooms have opened, the gills should be evenly spaced, beautiful, and dry.
- When choosing fresh shiitake mushrooms, select those with medium caps, tightly curled, and a slightly yellow-brown color. If you see dark brown mushrooms, it is better not to buy them, as they may be poisonous.
- How to choose good dried mushrooms: choose those that are firm, not broken, bright in color, and free of white mold spots. Choose a reputable source to buy dried mushrooms to ensure safety.
How to prepare Vegetarian Duck Meat

Prepare the ingredients
Fresh tofu skin washed clean with water.
Pickled radish soaked in water for about 5 hours to remove the saltiness. Cut into small pieces for easy eating.
Shiitake mushrooms soaked in water until soft, taking the mushroom stems (discarding the caps) for a chewy and delicious texture, cut the mushrooms like pickled radish.
Tofu washed clean, drained. Tear the tofu skin into small pieces according to the size of the duck meat you want to make.
Tip:
- To soak mushrooms faster, use warm or hot water to soak the mushrooms.
- Add a little salt to the soaking water for the mushrooms. When soaking, make sure the mushroom stems are submerged in the water. This way, you can easily remove any dirt from the shiitake mushrooms.

Mix the mixture
Add tofu to a bowl, mash well, season with 1 teaspoon of vegetarian seasoning, 1/2 teaspoon of pepper, and mix well again.
Add the cleaned tofu skin to the tofu bowl, and mix well.

Roll the duck meat
Take a piece of tofu skin, add pickled radish and chopped mushrooms, then roll it tightly for a chewy and delicious duck meat.
Put the meat into a plastic net and use string to tie both ends tightly as shown.

Steamed Vegetarian Duck
Prepare a pot of boiling water, place the vegetarian duck in to steam for about 20 – 30 minutes over medium heat until fully cooked.
Use scissors to cut the strings, remove the mesh layer, and the vegetarian duck is ready.
