  • Mix the cocoa and coconut milk mixture

    You roast 5g of star anise on low heat for about 3 – 5 minutes until the flower releases its fragrance. Then, you dissolve 10g of cocoa powder with 50ml of warm water.

    Next, you prepare a large bowl and add all the cocoa, star anise, 300ml of coconut milk, and 100ml of condensed milk into it, then stir well to combine the mixture.

  • Cook the cocoa and coconut cream mixture

    First, place a pan on the stove, then add 100g of palm sugar and 50ml of regular water, and simmer over low heat until the sugar is completely dissolved.

    Next, add the entire cocoa and coconut cream mixture into the pan and simmer gently for about 5 minutes, then turn off the heat and let it cool.

  • Mixing the cake batter

    In this step, you add 5 duck eggs along with 1/2 teaspoon of salt into a large bowl, using a whisk to gently stir in one direction to beat the eggs without creating bubbles.

    At this point, the cocoa mixture has cooled down, you pass this mixture through an strainer to make it smooth and combine it with the egg bowl, then mix well.

    Next, you dissolve 10g of rice flour in 50ml of regular water. After that, you add the rice flour water along with 3g of baking powder to the cake batter mixture and stir thoroughly.

    Finally, you strain the batter mixture again through a sieve to remove any residue.

  • Baking the cake

    You spread 2 teaspoons of oil evenly over the inside of the cake mold to prevent sticking. Next, you place the cake mold in the oven at 175 degrees Celsius for about 10 minutes to preheat.

    After 10 minutes, you pour the cake batter into the mold and bake for about 30 minutes at 175 degrees Celsius.

    After 30 minutes, you use a toothpick to check the cake; if the toothpick comes out clean and dry, the cake is done.

    After baking, you let the cake cool a bit, then place it in the refrigerator for about 4 hours before removing it from the mold to enjoy!
