How to make Grilled Gan Cake from the Western Region

Mix the cocoa and coconut milk mixture
You roast 5g of star anise on low heat for about 3 – 5 minutes until the flower releases its fragrance. Then, you dissolve 10g of cocoa powder with 50ml of warm water.
Next, you prepare a large bowl and add all the cocoa, star anise, 300ml of coconut milk, and 100ml of condensed milk into it, then stir well to combine the mixture.

Cook the cocoa and coconut cream mixture
First, place a pan on the stove, then add 100g of palm sugar and 50ml of regular water, and simmer over low heat until the sugar is completely dissolved.
Next, add the entire cocoa and coconut cream mixture into the pan and simmer gently for about 5 minutes, then turn off the heat and let it cool.

Mixing the cake batter

After 10 minutes, you pour the cake batter into the mold and bake for about 30 minutes at 175 degrees Celsius.
After 30 minutes, you use a toothpick to check the cake; if the toothpick comes out clean and dry, the cake is done.
After baking, you let the cake cool a bit, then place it in the refrigerator for about 4 hours before removing it from the mold to enjoy!
