Ingredients for Duck Sausage For 4 people

Duck 1 whole Fermented tofu 2 pieces Ginger powder 1 tablespoon Char siu powder 1 teaspoon Dried garlic 1 teaspoon Five spice powder 1 teaspoon Cooking wine 3 tablespoons Common seasonings a little (sugar/ salt/ monosodium glutamate)

How to choose fresh ducks

For live ducks

  • You should choose ducks with shiny feathers, and the inner part should have no down feathers, with the outer feathers long and fully grown.
  • When you hold the duck’s breast, if it feels plump, thick skin on the neck and belly indicates a good duck, the meat is not mushy.
  • Observe the duck’s wings; if the two wings can cross each other, it is a mature duck, easy to pluck feathers and has a lot of meat.
  • Do not choose ducks with frizzy feathers, a foul smell, or drooping posture, as these may be sick ducks, consuming them can harm your health.

For processed ducks

  • Choose ducks with evenly colored light yellow skin, fresh pink-red meat, and a distinctive duck meat aroma.
  • Press on the duck; if it feels firm and elastic, it is a good duck. Do not choose those that feel soft and mushy, have a foul smell, or are leaking juices, as these are old ducks with poor quality meat.
  • Do not choose ducks that are too dark in color or have bruises and spots, as this indicates the duck meat is no longer fresh.

How to Prepare Duck Lap

  • Prepare Duck Meat

    To remove the unpleasant odor and slime, put 1 tablespoon of ginger powder and 1 tablespoon of salt into a bowl and mix well, then use the ginger-salt mixture to rub around the duck’s skin for 10 minutes.

    After that, wash the duck thoroughly with water, drain, and use a knife to separate the meat from the duck.

    Ways to Reduce the Odor of Duck Meat:

    • Use salt, white wine, and crushed ginger to rub evenly on the duck for a few minutes, then rinse thoroughly with water.
    • Rub salt evenly on the duck, then use a halved lemon to rub over the duck again and rinse with water.
    • Additionally, you can blanch the duck in boiling water for about 5 minutes to remove slime and fishy smell.

  • Marinate Duck Meat

    Add to the duck meat a mixture of 3 tablespoons of mai que lo wine and 2 pieces of fermented bean curd that have been mixed well, then stir well.

    Then, add 1 tablespoon of sugar, 2 teaspoons of salt, 1 teaspoon of dried garlic powder, 1 teaspoon of five-spice powder, 1 teaspoon of char siu powder, and 1/2 teaspoon of monosodium glutamate to the meat and mix well to marinate for 10 minutes so that the meat absorbs the spices.

  • Drying lap vit

    Place the marinated meat into the drying oven and dry for 15 hours at a temperature of 65 degrees Celsius. Every 2 – 3 hours, turn the meat over to ensure even drying.

    Dry until the duck meat is completely dry and slightly golden on all sides, then remove and place in a cold storage bag.

    Tip: During the drying process, you can brush a little marinade sauce on the meat for a richer flavor.
