Pork liver 350 gr Garlic 6 cloves Chili 5 pieces Green onions 4 stalks Cooking oil 1 tablespoon Fish sauce 1/2 teaspoon Common seasoning a little (salt/ sugar/ monosodium glutamate/ seasoning powder)

How to choose fresh and delicious pork liver

  • Fresh pork liver has a bright color, bright red or pink and is uniform in color.
  • Good pork liver has a smooth, flat, beautiful surface and is not lumpy.
  • When you press on the surface of the liver with your hand, you can feel the elasticity and the surface does not sink.
  • Pork liver with signs of dark color, yellowing, and uneven color should not be purchased.
  • If the liver has a foul, fishy, unpleasant odor, it should not be bought as it has spoiled.

Ingredients for garlic stir-fried liver dish

How to prepare Garlic Fried Liver

  • Prepare and marinate pig liver

    Wash the pig liver with diluted salt water, then rinse with clean water, drain, and cut into bite-sized pieces.

    Marinate the pig liver with 1/2 teaspoon of salt, 1/3 teaspoon of monosodium glutamate, 1/3 teaspoon of seasoning powder, 1/2 teaspoon of sugar, and 1/2 teaspoon of fish sauce.

    Stir well for the seasonings to soak in, then marinate for 15 – 20 minutes.

    How to clean and safely prepare pig liver

    • Method 1: Soak the pig liver in milk for about 30 minutes, then wash it again with clean water. Fresh unsweetened milk not only cleans the pig liver but also effectively removes its odor.
    • Method 2: Soak the pig liver in salt water for about 1 – 2 hours. After that, rinse it with clean water. The salt will help disinfect the inside of the liver and eliminate harmful bacteria sticking to it.

  • Prepare other ingredients

    Green onions washed clean, cut into pieces. Chili washed clean, minced finely.

    Garlic peeled, washed clean. Half of it should be crushed and minced to sauté for fragrance, the remaining part should be sliced to stir-fry with the liver.

    Place a pot on the gas stove, add 1 tablespoon of cooking oil. When the oil is hot, add the minced garlic to sauté for fragrance.

    When the garlic turns golden, add 1/2 of the minced chili and the sliced garlic to sauté together.

    Next, add all the marinated pork liver and stir-fry over medium heat for 7 – 10 minutes until the pork liver is cooked and absorbs the flavor.

    Then, add the green onions and the remaining chili, season to taste, and turn off the heat.

    Finally, scoop the dish onto a plate and it can be enjoyed immediately.
