How to choose fresh and delicious razor clams
- You should prioritize buying razor clams that have their tongues sticking out, as these are live clams, ensuring freshness when cooked.
- Live clams will frequently open and close their shells; when you touch the shell, the clam will tightly close its shell to protect itself. These are the razor clams you should buy.
- Choose razor clams of moderate size; if they are too large, the meat will be tough, and if they are too small, there won’t be much meat.
- Avoid buying clams that are always closed, have a foul smell, as these are dead clams, which will make the overall dish unappetizing after cooking.

How to cook garlic stir-fried razor clams

Prepare the ingredients
Soak the razor clams in rice water for about 3 – 4 hours, then wash them thoroughly under running water to remove dirt and sand.
How to clean razor clams from dirt:
- Method 1: Soak the clams in diluted saltwater with a few slices of ginger for 2 – 3 hours, then rinse them with water; this will clean the clams and remove the fishy smell.
- Method 2: Use fermented rice (mẻ) diluted with water to soak the razor clams for about 1 – 2 hours, and they will release dirt and sand.
Wash the lemongrass, cut it into pieces, and crush it.
Remove the wilted and yellowed parts from the Vietnamese coriander. Then wash it thoroughly, soak it in salt water for 5 minutes, and drain.

Blanch the clams
Place a pot on the stove, add 500ml of water and the crushed lemongrass into the pot. When the water boils, add the clams for blanching and stir evenly for about 1 minute.
After taking them out, wash the clams with water once more to remove sand and impurities.

Stir-fried razor clams
Place a pan on the stove, add 2 tablespoons of cooking oil and sauté 2 teaspoons of minced garlic until fragrant. Then, remove 1/2 of the sautéed garlic to set aside, and add the clams to stir-fry, stirring constantly.
Reduce the heat and add 3 tablespoons of water, 1 teaspoon of sugar, 1/2 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, 2 teaspoons of oyster sauce, 1 teaspoon of chili sauce, and 1 teaspoon of ground pepper to the pan.
Increase the heat again and stir the clams for 2 minutes to absorb the seasoning, then turn off the stove.
Finally, transfer the clams to a plate and sprinkle the remaining sautéed garlic on top to make the dish more appealing.
