How to choose fresh and delicious ingredients
How to choose delicious kohlrabi
- It is best to choose kohlrabi that are of moderate size, feel heavy when held, and are not soft.
- Delicious kohlrabi will have a light green color, intact and not bruised, with the leaf stems still having a vibrant green color and firmly attached to the bulb.
- Avoid choosing kohlrabi that shows signs of being wormy, old, has an unpleasant smell, or those that have been pre-peeled, as these may be low-quality kohlrabi.
How to choose fresh, quality chicken eggs
- Industrial chicken eggs usually have a dark brown shell, uniform color, and no black spots on the shell. In contrast, local and backyard chicken eggs often have a pale color, and the whiter the shell, the tastier the egg will be.
- Choose eggs that, when held and shaken lightly, do not make any noise, and the surface of the egg shell is rough, as these are fresh, quality chicken eggs.
- Avoid choosing chicken eggs with a smooth surface, which make a loud noise when shaken, as these may be old eggs.

Prepare the ingredients
After buying kohlrabi, peel off the skin, remove the stem, and wash it thoroughly with water. Then use a knife to cut the kohlrabi into short, small strands.
Similarly, for the carrot, after cutting off the stem, peeling, and washing it clean, you also cut it into bite-sized strands.
Next, peel the shallots and slice them thinly. Cut off the roots and yellow leaves of the green onions and coriander, wash them under running water, then drain and chop them finely.
Finally, crack the eggs into a bowl, season with 1/2 teaspoon of ground pepper, 1/2 teaspoon of sugar, 1/2 teaspoon of seasoning powder, and 1/2 teaspoon of monosodium glutamate, then beat the eggs well so that they dissolve and absorb the seasoning.

Continue to stir-fry over medium heat for about 2 minutes, then add the pre-prepared kohlrabi and stir-fry continuously for about 7 minutes until the kohlrabi and carrots are cooked.
