  • Good tomatoes have a bright red color, shiny, plump, and you can see tiny spots on the skin. Pressing lightly with your hand should feel a moderate softness.
  • Additionally, if the tomato has a stem tightly attached to the fruit, it is fresh and newly picked. Smelling the tomato will reveal the characteristic aroma of ripe tomatoes.

  • Prepare the ingredients

    Wash 3 tomatoes, cut 1 into small pieces, and cut the other 2 into wedges.

    Peel the onion and cut it into wedges. Peel the pineapple, remove the eyes, and slice it. Peel the ginger and cut it into small pieces. Wash the lemongrass and cut it into sections.

  • Sauté canned fish

    Place a pan on the stove over medium heat, add 1 tablespoon of cooking oil to the pan, when the pan is hot, add 1 tablespoon of minced shallots to sauté until fragrant.

    Next, add 3 cans of fish and sauté for about 1 minute until fragrant, then turn off the heat.

  • Cook the broth

    Place a pot on the stove over medium heat, add 1 tablespoon of cooking oil, when it heats up, add 1 tablespoon of minced shallots to sauté until fragrant.

    Finally, add the sautéed fish sauce and the tomatoes cut into wedges, bring to a boil and reduce to low heat to simmer for another 15 minutes, then taste and adjust seasoning as needed before turning off the heat.
