How to choose and where to buy good dried stingray fish
- Good dried stingray fish will have bright colors, the fish meat is yellow, with a fragrance or a slightly fishy smell characteristic of dried fish.
- When buying, you should choose fish that still have intact fins, with skin tightly adhering to the fish meat.
- Do not choose dried fish that is too yellow, as these fish may have been oiled, making them less tasty.

How to prepare Fried Stingray with Fish Sauce

Prepare the dried stingray
Wash the dried stingray you bought with water to remove any dirt sticking to the surface, then take it out and let it drain.
Next, use scissors to cut it into long, bite-sized strips, about 1/2 finger width.

Prepare other ingredients
Wash the green onions, cut off the roots, and chop the green parts into pieces about 1.5 finger lengths. The green leaves are not used.
Wash the chili peppers and slice them. For the onion, remove the roots, peel, and cut into wedges.

Fry the dried stingray
Put 300ml of cooking oil into a pan, then heat it over high heat until the oil is shimmering, then add the cut dried stingray.
Stir continuously until the stingray turns slightly golden, then increase the heat to maximum and fry for about 3 more minutes until the stingray is golden and crispy, then turn off the heat and take the stingray out.

Frying dried fish with fish sauce
First, we prepare the fish sauce by dissolving 2 teaspoons of monosodium glutamate, 2 tablespoons of sugar, and 4 tablespoons of fish sauce into a bowl, then use a ladle to stir well until the ingredients are fully dissolved, then add 600g of chili sauce and stir well until all ingredients are mixed.
Next, add 10ml of cooking oil and about 1/2 tablespoon of minced garlic into the pan. Stir well until the garlic is fragrant, then add sliced onion, chopped green onion, and sliced bell pepper.
Sauté over medium heat for about 3 minutes until the onion is translucent and the other ingredients are just cooked, then add 1 ladle of the prepared fish sauce and the drained stingray into the pan.
Then, turn the heat up high, toss and stir until the stingray and other ingredients are well coated with the fish sauce, then turn off the heat.
Transfer to a plate and garnish with some tomatoes and cucumbers, and we can enjoy this dish right away.
