How to choose good gac

  • To choose good gac, you should select fruits with bright red skin, with evenly expanded spines on the skin, and the gac fruit should be round and of moderate size.
  • When you hold the gac, it should feel heavy and firm, pressing lightly on the skin should feel slightly hard, and the stem should be fresh and firmly attached to the fruit, indicating it is ripe and has good flesh.
  • You should not buy gac fruits with soft skin or wilted stems, as these are fruits that have been left for too long or are spoiled, which will not taste good when processed.

  • Prepare the Gấc

    Wash the gấc thoroughly with water. Use a knife to cut the gấc in half horizontally, scoop out the seeds into a bowl, and separate the membrane, discarding the seeds. Use a spoon to scrape the flesh of the gấc into a separate bowl.

  • Cook the Gấc Jam

    Next, add 200g of brown sugar to the bowl of gấc flesh, then add the gấc seed membrane, mix well, and let the mixture soak in the sugar for about 15 minutes before blending.

    Then, place the gấc in a pot, add 2 teaspoons of olive oil, and cook on low heat for about 5 – 10 more minutes.
