How to choose fresh mushrooms
- Choose mushrooms that are white, with short stems, round caps, and a characteristic fragrant smell.
- It is best to choose medium-sized mushrooms that feel firm to the touch, not too small or too “puffy”.
- Avoid purchasing mushrooms that are turning a light cream color or have dark spots, as these are often older, less tasty, or spoiled.
- When selecting, you should sniff them; if the mushrooms smell rotten or strange, do not choose them.
How to choose fresh onions
- Onions mainly come in 3 types: white, yellow, and red. The darker the color, the stronger the flavor, so the strongest is red onion and the sweetest is white onion. For stir-fry dishes, use white onions.
- Choose bulbs with thin, shiny, and evenly colored skins; they should feel dry and firm to the touch.
- Avoid choosing bulbs that have sprouted, have both hard and soft spots, and have uneven colors – these onions are not fresh and may taste bitter.
How to prepare Garlic Fried Abalone Mushrooms

Prepare the ingredients
After buying the abalone mushrooms, keep them whole, cut off the stems, and soak them in diluted salt water for about 10 minutes, then rinse with clean water and let them drain.
For the onion, remove the root, peel it, wash it clean, and dice it.
Remove the root from the garlic, peel it, wash it clean, and chop it finely.
Cut off the roots of the cilantro, wash it clean, and chop it finely.

Sautéing mushrooms
Place a pan on high heat until it gets really hot, add 2 tablespoons of cooking oil and 3 tablespoons of unsalted butter to the pan. When the butter has completely melted and is bubbling, add the diced onion and sauté for about 2 minutes.
Once the onion starts to release its aroma, add the butter mushrooms to the pan, keep the heat high, and sear the mushrooms until the bottom is cooked and turns a golden brown. Flip the mushrooms and continue to sear the other side.
When both sides of the mushrooms are beautifully golden brown and emit a characteristic aroma, lower the heat to medium, add the minced garlic, season with 1/2 teaspoon of salt and 1/2 teaspoon of pepper, and stir well for another 2 minutes until the mushrooms are fully cooked and absorb the seasoning.
Finally, taste the seasoning again to adjust as needed, add the finely chopped cilantro and stir for 30 seconds until the cilantro is cooked, then turn off the heat. The dish is now complete and ready to be served!
