Ingredients for Garlic Fried Duck Serves 4 people

Duck meat 1 kg (1 duck) Garlic 6 cloves (single bulb garlic) Vinegar 2 tablespoons Ginger 4 slices Five-spice powder 1/2 tablespoon Oyster sauce 1 tablespoon Fish sauce 1/2 tablespoon Ginger powder 1/2 tablespoon Garlic powder 1/3 tablespoon Annatto oil 1/2 tablespoon Cooking oil 500 ml Common spices A little (salt/seasoning/ sugar)

How to choose fresh and delicious duck meat

For live ducks

  • You should choose ducks with thick skin on the belly and neck, and when lifted, they should feel very heavy. These are the fat and delicious ducks.
  • Avoid buying ducks with sagging bellies as these are ducks that have laid many eggs, and the meat will not be tasty because it will be tough and less enjoyable to eat.
  • Additionally, when buying, you should pull the two duck wings together; if they just cross each other, then you should buy them.

For processed ducks

  • Choose ducks that have just been freshly slaughtered, with the outer skin being a yellow color, not too dark, mottled, or with many bruises.
  • Avoid buying ducks that deform when pressed on the meat, which may be due to water being injected. Good ducks will have firm meat and will spring back when pressed.

How to prepare Garlic Roasted Duck

  • Prepare the duck meat

    To eliminate the odor of the duck, use a mixture of 4 tablespoons of coarse salt and 2 tablespoons of cooking vinegar, along with 4 slices of ginger, rubbing it all over the duck until the odor is gone and all impurities are removed. Then rinse with clean water and cut the duck into bite-sized pieces.

    How to clean duck meat properly and without odor
    • Method 1: Use salt, white wine, and crushed ginger to rub thoroughly over the duck for a few minutes, then wash clean with water.
    • Method 2: Rub salt evenly over the duck, then use a halved lemon to rub over the duck once more and rinse clean with water.
    • Method 3: Remove the fat gland from the duck’s anus to eliminate the odor during cooking.

  • Marinating Duck Meat

    Combine the chopped duck with 1 spoon of seasoning, 1/2 tablespoon of sugar, 1/2 tablespoon of five-spice powder, 1 tablespoon of oyster sauce, 1/2 tablespoon of fish sauce, 1/2 tablespoon of ginger powder, 1/3 tablespoon of garlic powder, and 1/2 tablespoon of annatto oil in a bowl, mix well and marinate for about 30 minutes.

  • Preparing garlic and frying garlic

    Garlic just needs to be peeled. Half of the garlic should be minced, and the remaining part should be sliced thinly for easy eating.

    Next, place a pan on the electric stove and add 500ml of cooking oil into the pan, heating on low for about 1 minute until the oil is bubbling, then add the sliced garlic.

    Fry evenly on low heat for about 3 minutes until the garlic is slightly golden, then turn off the heat, and remove the fried garlic slices to place on oil-absorbing paper.

  • Fry the duck

    After the garlic has been fried, add the marinated duck to the pan and deep-fry over medium heat for about 10 minutes until the duck meat is golden brown, then remove it.

    Place the fried duck on a plate, sprinkle some sliced and minced garlic that has been fried on top, and it’s done.

    Tip: To make the dish more flavorful, you should fry the duck with garlic oil.
