How to Choose Good Duck Meat
- Choose ducks with smooth feathers or fully feathered, select ducks that are mature with a round breast, thick neck skin, and belly skin.
- You can pull the two duck wings together; if they just cross each other perfectly, it’s a good choice.
- For pre-prepared ducks, choose those with outer skin that is yellow but not too dark; when you press on the meat, it should feel firm and have good elasticity.
How to cook Sweet and Sour Duck Stir-fry

Prepare the duck meat
After purchasing the duck, rinse it briefly with water and then rub the outside and inside with lemon, removing all the fine feathers. After that, rinse it again with water once more to clean and let it drain, then cut it into bite-sized pieces.

Marinate the duck meat
Put the duck meat into a bowl and marinate with 1/4 tablespoon of seasoning powder, 1/4 tablespoon of ground pepper, and 1/2 tablespoon of minced shallots, then mix well. After that, add 1 tablespoon of vinegar and continue to mix evenly, then marinate for 30 minutes for the meat to absorb the spices.

Stir-fried duck meat
Place a pan on the stove, add 150ml of cooking oil to the pan. Wait for the oil to heat up, then add the meat to fry. When one side of the meat is golden, flip it over to fry the other side. Once both sides are evenly cooked and golden, remove it.
Place another pan on the stove, add 2 tablespoons of cooking oil to the pan, then add 1/2 tablespoon of minced garlic to fry until fragrant.
Next, add the duck meat to stir-fry together, then add 1 tablespoon of sugar, 1.5 tablespoons of vinegar, and 1 tablespoon of fish sauce. After that, stir-fry for another 2 minutes, then season to taste and turn off the heat to transfer the meat to a plate.
