How to choose quality ground pork

  • You can buy pre-ground meat or buy pork to grind at home using a meat grinder!
  • For whole pieces of pork, first pay attention to the color. Good meat is bright pink, not too red or too pale. If the pork is pale, has a greenish tint and a foul smell, then it has spoiled, and you should not choose this type of meat.
  • Pork that is firm and has high elasticity is good meat. You can test it by pressing your finger into the meat; if it springs back immediately, is not slimy, and does not leak water or fluids, then it’s fine.
  • For pre-ground pork, you should buy it from reputable shops or supermarkets.
  • You should choose pork with a mix of lean and fat to ensure that your dish is not dry and does not have an overpowering fatty taste.

How to make Rice Paper with Ground Meat and Onion Oil

  • Prepare the ingredients

    Roast the peanuts until golden, then let them cool, remove the shells, and crush them.

    Cut the roots off the green onions, wash them clean, and chop them finely. Pick the old leaves off the Vietnamese coriander, wash them clean, and let them drain.

    Cut the rice paper into bite-sized pieces. Halve the lime and squeeze out the juice. Peel and mince the garlic.

    Peel the green mango, wash it clean, and then shred it.

  • Stir-fry minced meat with scallions

    Place a pan on the stove, add 2 tablespoons of cooking oil and heat it, then add minced garlic and sauté until fragrant.

  • Mixing Rice Paper

    Put the rice paper into a bowl, then add the sautéed minced meat and mix well with your hands.

    Next, add 1 tablespoon of shrimp salt, 2 tablespoons of chili paste, lime juice, fried garlic, 2 tablespoons of fried onions, 2 tablespoons of fish sauce, and crushed peanuts, then mix all the ingredients thoroughly.
