How to prepare Vegetarian Sầu Đâu Salad

Prepare the ingredients
Wash the mango thoroughly, then shred it into thin strips,
Blanch the Sầu Đâu leaves briefly in boiling water, then transfer them to cold water to help the leaves stay green and crisp, while also removing the bitterness. When using, let the Sầu Đâu leaves drain.
Shred the cucumber around the outside, avoiding the cucumber’s core.
Rinse the tofu skin once, then blanch it in boiling water for 2 minutes to make it more chewy and soft. Then cut it into small pieces about 5 – 7 cm long and tear it into smaller pieces for quicker frying.

Marinate and fry the tofu
Cut the tofu into long square strips about 1.5 cm. Place the tofu together with the tofu skin, add a pinch of garlic and 2 teaspoons of vegetarian seasoning, mix well to ensure the tofu and tofu skin absorb the seasoning, and marinate for 20 minutes before frying.
Add cooking oil to the pan, then add the tofu and tofu skin to fry until golden and crispy.

Make the dressing
Add garlic and chili to sauté until fragrant, then add tamarind juice and stir well. If the mixture is too thick, add a little water! Season with sugar and 1 tablespoon of vegetarian fish sauce, cook until the sauce thickens, then add 1 crushed roasted peanut. Turn off the heat and wait for the sauce to cool before mixing it with the salad!

Mix the salad
Add sầu đâu leaves, green mango, and cucumber to a bowl and mix well. Add the tofu and fried tofu skin and mix thoroughly. Finally, drizzle about 5 tablespoons of the dressing, adjusting the amount to your taste. Then plate it and garnish with a little roasted peanuts.
