  • Good goat meat is from young goats, still fresh, with a thin layer of skin, all lean meat, and not thick.
  • The color is bright and shiny red, with even and firm meat, and when touched, the meat feels elastic, especially it should not stick to your hand at all.
  • Freshly slaughtered goat meat usually has a distinctive smell that can be slightly unpleasant.
    Light-colored meat, that is not firm or has a foul smell is spoiled and rotten meat, thus should not be purchased.

Where to buy, the price of Chinese herbal ingredients

  • You can find Chinese herbs at traditional medicine shops, or e-commerce websites. Note that Chinese herbs are pre-packaged, you should pay attention to the packaging, expiry date, and clear provenance.
  • For Chinese herbs purchased directly at the shop, they should have a distinctive fragrant smell, feel dry to the touch, and show no signs of mold.
  • The price of a dose of Chinese herbs ranges from 70,000 – 120,000 VND/200gr (price updated as of 21/07/2021).

How to choose fresh mugwort

  • When buying mugwort, you should choose those with young leaves, light green on the top and dark green on the bottom.
  • The leaf blades should follow the leaf stalk down to the root so that the leaves do not become bitter and unpleasant to eat.
  • You should choose fresh green leaves that are not wilted or yellowing.

How to prepare Braised Goat Meat with Chinese Herbs

  • Prepare the ingredients

    After buying the goat meat, rub salt onto the goat meat and wash it clean. To eliminate the unpleasant smell of goat meat, prepare a pot of boiling water, blanch the goat meat for 2 – 3 minutes over high heat, then remove it, rinse with water, and let it drain.

    Once the goat meat has drained, roast it over fire until the skin turns yellow, then use a knife to scrape it clean.

    • Method 1: To remove the unpleasant smell of goat meat, besides the above method, you can wash the goat meat by mixing white wine with crushed ginger for 5 minutes. After that, rinse thoroughly with cold water and let it drain.
    • Method 2: Dissolve 15ml of rice vinegar in 1 liter of clean water, bring to a boil on the stove. Boil the goat meat in this mixture until the water boils again, then remove it. At this point, the goat meat will have significantly reduced its smell.
    • Method 3: Additionally, during the cooking process, you can add a few pieces of tangerine or pomelo peel, which is also quite effective in eliminating the smell of goat meat.

    Then, cut the goat meat into bite-sized pieces.

    Wash the Chinese herbs and chop them finely.

    Pick the leaves and tender parts of the mugwort, discarding the wilted leaves. Rinse the mugwort thoroughly 2 – 3 times in water and then place it in a colander to drain.

    You boil a pot of water, blanch the goat meat with 3 – 4 stalks of lemongrass for 5 minutes and then take it out.

    When the water in the pot is boiling, add the blanched goat meat and wait for it to boil again. Then, season the pot with 1 tablespoon of seasoning, 1 tablespoon of sugar, 1 smashed stalk of lemongrass, and shredded ginger.

    Stew until the goat meat is tender, then add wormwood, turn off the heat, and serve in a bowl for decoration.
