Rice flour 200 gr Tapioca flour 200 gr Glutinous rice flour 50 gr Minced pork 200 gr Shiitake mushrooms 20 gr Wood ear mushrooms 20 gr Cilantro A little Minced garlic and chili A little Shallots 2 bulbs (finely chopped) Cooking oil 1 tablespoon Vinegar 1 tablespoon Fish sauce 2 tablespoons Common seasoning A little (salt/ sugar/ pepper)

  • You can buy pre-ground pork at the market and then prepare it, but it will be difficult to check the meat’s quality. It is best to buy whole pork and grind it yourself using a meat grinder to ensure safety and quality when using.
  • Fresh pork will have high elasticity and firmness. You can press the meat with your hand to check; if the meat does not leave a dent and does not stick to your hand, then it is good meat. Conversely, spoiled meat will not return to its normal state immediately when pressed.
  • Good meat will have bright red or dark red color, shiny, and a dry outer membrane.
  • If you see the meat showing gray, brown, dark red or pale green colors, or is slimy, do not buy it. These are signs that the meat has spoiled.
  • Additionally, pork raised with lean meat enhancers will have a dark color, show red spots on the skin, and have a stronger fishy smell compared to clean pork.

  • Prioritize choosing mushrooms with large ears, thick caps, and few small mushrooms at the base.
  • Good wood ear mushrooms will have a dark amber color, slightly shiny, with a light coffee color on the underside.
  • Do not choose mushrooms with black spots as they are less crispy and tend to become mushy when soaked in water.
  • Do not choose mushrooms showing signs of white mold or dripping water.

How to make rice cake

  • Cooking the meat part

    First, soak the dried mushrooms and shiitake mushrooms in cold water for about 30 minutes. Then, cut off the stems, wash thoroughly, and chop finely.

    Heat a pan on the stove, sauté the finely chopped shallots until fragrant. When the shallots are fragrant and golden, remove 1/2 of the fried shallots to a bowl and set aside. Then, add the minced pork, shiitake mushrooms, and dried mushrooms. Stir the mixture over medium heat until the meat is slightly cooked.

    Next, season with 1 tablespoon of fish sauce, 1 teaspoon of salt, and 1 teaspoon of pepper. Continue to stir for about another 10 minutes until the filling is cooked, then turn off the heat.

  • Making hot bánh đúc

    Add to the pot 200g of rice flour, 200g of tapioca flour, 50g of glutinous rice flour, and 1 liter of water, then stir well until the flour dissolves. After that, place the pot on the stove and stir continuously over medium heat until smooth and thickened.

    At this point, add 1 tablespoon of cooking oil and stir for another 1-2 minutes before turning off the heat.

    To prepare the dipping sauce, mix in a bowl the ratio of 2 tablespoons of warm water, 1 tablespoon of sugar, 1 tablespoon of vinegar, and 1 tablespoon of fish sauce, then stir well. Finally, add a little minced garlic and chili for flavor.

    Finally, scoop the bánh đúc into a bowl, add meat on top, sprinkle some fried onions from Step 1, a bit of coriander, and drizzle with the dipping sauce to enjoy immediately.
