Oreo cookies 14 pieces Gelatin powder 5 gr Cocoa powder a little Unsalted butter 35 gr Instant black coffee 2 tablespoons Whipping cream 250 ml Sugar 45 gr

How to make Oreo mousse cake

  • Make the cake base

    First, put 14 Oreo cookies into a blender and blend until finely crushed. After blending, set aside 45g of Oreo in a bowl.

    In the remaining Oreo mixture, add 35g of melted unsalted butter and mix well. Next, place this Oreo mixture into a cupcake mold and use a spoon or a small pestle to press the mixture firmly down to the bottom.

    Then, chill the cake base in the fridge for 30 minutes.

  • Make the mousse

    In a bowl, add 5g of gelatin powder and 25ml of cold water, then stir well and let it soak for about 15 minutes for the gelatin to bloom. After 15 minutes, melt it in the microwave for 3 – 5 minutes.

    Next, in a bowl, combine: 250ml of whipping cream, 45g of crushed Oreo, and 15g of sugar. Use a hand mixer to beat the mixture until slightly thickened.

    At this point, add the melted gelatin into the bowl, and continue to beat until the cream is soft and fluffy, lifting the whisk to create peaks that bend slightly.

    Then, pour this mousse mixture into the cake base mold and freeze in the freezer for 2 hours.

  • Make the dalgona part

    Put 2 tablespoons of instant black coffee, 2 tablespoons of sugar, and 2 tablespoons of hot water into a new bowl.

    Next, use a mixer to beat the mixture until it becomes fluffy and forms peaks, then place it in the refrigerator for another 10 minutes.

    Finally, take the cake out of the mold and spread a layer of dalgona evenly on top, sprinkle a little cocoa powder to finish.
