  • You should avoid buying kohlrabi that shows signs of being wormy, old, has an unpleasant smell, or pre-peeled bulbs as these may be of poor quality.

  • You should choose pieces of fresh pork, with bright red color, with plenty of interspersed fat, and the characteristic smell of pork.
  • In addition, prioritize selecting pieces of meat that feel elastic to the touch and are not mushy, and when lifted, feel firm.
  • Avoid buying pieces that are pale white, darkened, and have a slimy yellow surface, with an unpleasant smell when sniffed.

  • Prepare the ingredients

    Peel the kohlrabi you bought, wash it clean, then use a knife to slice the kohlrabi into thin pieces, rinse briefly with water, and let it drain.

    Rub the pork with a little salt, wash it clean with water, then remove it to drain, and cut it into thin slices to put in a bowl.

    Peel the garlic and shallots, wash them briefly with water, then chop them finely.

    Remove the roots and wilted leaves from the green onions and cilantro, wash them clean, and chop them finely.
