How to Make Ripe Papaya Jam

Prepare the Ingredients
First, add 1 tablespoon of lime to a bowl of water, let it settle for 1 hour, and then take the clear lime water from the top.
For the papaya, peel, cut in half to remove the seeds, and rinse with water. Cut the papaya into thick strips about 1/2 finger width and approximately 1 finger long. Soak the papaya in diluted salt water for 15 minutes to remove the sap, then rinse with clean water.
Next, soak for 2 hours in the clear lime water, then take it out and rinse the papaya several times with cold water.
Boil a kettle of water, pour it over the papaya in the bowl to blanch for 1 minute, then take the papaya out to drain.

Mix 500g of papaya (prepared) with 200g of sugar and 1 vanilla pod, and marinate for 1 hour until the sugar dissolves completely.
