Salted radish 100 gr Chili powder 1 teaspoon Soy sauce 1 tablespoon Green onions 2 stalks Chili 1 piece Cooking oil 1 teaspoon Common spices a little (sugar/ monosodium glutamate/ pepper/ salt)

How to choose delicious salted radish

  • You can choose to buy whole salted radishes or cut salted radish strips.
  • Delicious salted radish has a uniform color, leaning towards yellow-brown.
  • When buying, you should squeeze the salted radish with your hand; it should feel soft, slightly dry, and have a natural fragrance.
  • Do not buy salted radish that is black or has strange colors, has an unpleasant smell, or is moldy.
  • You can easily find salted radish at large markets, food stores, or e-commerce sites. The price ranges from 40,000 – 42,000 VND/ kg (price updated on 06/02/2021).

How to make Stir-fried Pickled Radish

  • Prepare the pickled radish

    Remove any yellow or wilted pickled radishes. Prepare a basin with 1 teaspoon of salt and 2 cups of cold water.

    Soak the pickled radish in the basin, squeezing it for about 2 minutes to reduce the saltiness.

    Boil a pot of water with about 2 cups, and briefly blanch the pickled radish for about 1 minute. After blanching, remove the radish and place it in a bowl of cold water to prevent it from getting mushy.

  • Prepare the other ingredients

    Remove the roots from the green onions, wash them thoroughly, and then chop them finely. Remove the stems from the chili peppers, wash them, and then mince them finely.

  • Stir-fried Radish

    Place a pan on the stove, add 1 teaspoon of cooking oil, then add chili and green onions into the pan, stir-frying for about 3 minutes until the chili and green onions become fragrant. Add the pickled radish and mix well for about 3 minutes until the radish is firm.

    Lower the heat, add 1 tablespoon of soy sauce, 1 tablespoon of sugar, 1 teaspoon of monosodium glutamate, 1 teaspoon of chili powder, and stir-fry evenly for another 3 minutes.

    When the radish is cooked and absorbs the seasoning, taste and adjust for flavor, turn off the heat and serve on a plate.
