Frog 500 gr Breading flour 200 gr Onion 2 bulbs Green onion 2 sprigs Cilantro 2 sprigs Garlic 1 bulb Chili pepper 1 piece Fish sauce 3 tablespoons Brown sugar 2 tablespoons (or white granulated sugar) Chili sauce 1 tablespoon Common spices a little (salt/ seasoning powder/ monosodium glutamate/ pepper) Vinegar 1 tablespoon Cooking oil 50 ml

How to choose fresh frogs

  • You should buy fresh frogs because the frog meat, after being processed, needs to be cooked immediately to appreciate its fresh flavor; if left outside for too long, the frog meat will gradually lose its aroma, including its inherent nutrients.
  • Good frogs are large, even-sized, and have brown-yellow skin.
  • Avoid buying frozen frogs or those that have already been processed.

How to choose good onions

  • Choose onions that are round in shape, with many long roots, indicating that the onion is still fresh. Avoid selecting onions that have unusual shapes or have missing roots, as they will not taste good.
  • Good onions have thin, shiny skins, a beautiful yellow color, are evenly colored, and do not have dark spots. When touched, the bulbs feel smooth and firm.
  • Avoid purchasing bulbs that have sprouted, have hard and soft spots, and are unevenly colored, as these are not fresh onions and may be bitter.

How to make Stir-fried Frog with Onions

  • Preparing the frog

    To eliminate the fishy smell of the frog, add about 1 tablespoon of vinegar and 1 tablespoon of salt to the bowl containing the frog, then use your hands to mix and massage the frog meat with the vinegar-salt mixture. Don’t forget to cut off the red blood area on the frog’s belly to reduce the odor.

    After that, use scissors to cut the frog meat into bite-sized pieces, then rinse thoroughly with water and drain.

    How to clean the frog and eliminate the smell

    You should ask the seller to clean the frog meat in advance to save time; then at home, you just need to eliminate the smell using one of the following two methods:

    • Method 1: Use alcohol and ginger to wash the frog, to kill bacteria and eliminate the fishy smell.
    • Method 2: Use vinegar and salt to wash the frog, which has a similar effect to method 1 but is less effective.

    Peel the onion and cut it into wedges.

    Smash the garlic, peel it, and then mince it finely.

    • Cut onions in a well-ventilated area, such as under a range hood or near a window.
    • Chill the onions in the freezer for 10-15 minutes before cutting.
    • Soak the onions in water before cutting.
    • Cut the onions horizontally.
    • Use vinegar or saltwater.

  • Marinate the frog meat

    After draining the frog meat, add 1 teaspoon of seasoning, 1/2 teaspoon of salt, and 1/2 teaspoon of monosodium glutamate. Mix well and let it marinate for 15 minutes for the meat to absorb the flavors.

  • Fried Frog

    Place a pan on the stove, add about 50ml of cooking oil so that it submerges the frog meat. Heat over medium heat.

    While waiting for the pan to heat up, add the crispy flour to the bowl containing the frog meat, and mix well to coat the frog meat entirely.

    Then, gradually add the frog meat to the pan, stir evenly over low heat for about 15 minutes until the frogs are golden brown on all sides.

  • Make the Sauce

    To make the sauce, add 3 tablespoons of fish sauce, 2 tablespoons of brown sugar, 1 tablespoon of chili sauce, and 1/2 teaspoon of pepper into a small bowl. Stir well to dissolve the sugar.

    Tip: You can use white sugar instead of brown sugar if you like!

  • Sautéed Frogs with Onions

    Place a pan on the stove, add about 1 tablespoon of cooking oil into the pan (use the oil left from frying the frogs), then add minced garlic and sauté until fragrant over medium heat.

    Next, add the sauce to the pan, stir well until the sauce thickens slightly, then add all the fried frogs, stirring to allow the meat to absorb the sauce.

    Finally, add the onions to the pan, sauté for about 10 minutes until the onions are cooked and translucent, season to taste and turn off the heat.

    Chop green onions and cilantro, add them to the pan, gently toss to mix, and it’s ready to enjoy!
