Peanuts 40 gr Glutinous rice flour 100 gr Granulated sugar 200 gr Filtered water 100 ml Condensed milk 1 can Shredded coconut 50 gr Lemon 1 piece Sweet rice paper 1 pack (sticky rice paper)

How to make Cotton Candy

Cook the sugar syrup
Pour 200g of sugar into a pot along with 150ml of water. Place the pot on the stove over medium heat. Stir gently for the sugar to dissolve, then reduce the heat to low and simmer for about 20 minutes.
When the syrup in the pot boils, add about 2 teaspoons of lemon juice into the pot and stir well to prevent crystallization. Cook for another 5 minutes, then turn off the heat.
Tip: To check if the syrup is ready, do the following:
Take about 1 spoonful of syrup and a bowl of water. Then use your hand to gently press the syrup, and then take the syrup out of the bowl and pull it to test. If the syrup is stretchy, the candy is ready.
If the syrup breaks, lacks elasticity, cook the syrup for another 2 minutes, and then test it again.

Roast the glutinous rice flour
Place a pan on the stove, add peanuts, and about 2 teaspoons of salt. Roast the peanuts over low heat until the peanut shells crack and the peanuts turn golden.
Similarly, add the glutinous rice flour to the pan. Roast the glutinous rice flour over low heat, stirring continuously with chopsticks for about 10 minutes, then turn off the heat.
Note: When roasting the glutinous rice flour, always stir continuously to prevent the flour from burning.

Pulling candy floss
Pour 1 teaspoon of cooking oil into a bowl, use a spatula to spread the oil evenly around the bowl. Pour the syrup you have cooked into the bowl.
Place the bowl of syrup into a small basin filled with water to cool the syrup.
When the syrup is still warm, put on gloves and take the syrup out to pull. Pull it out, then fold it back and pull again. Repeat this until the syrup turns opaque white, then place it on parchment paper.
Take out a suitable amount of syrup, wrap it around your finger to form a circle. Dip the syrup in the toasted glutinous rice flour. Then gently pull it out and wrap it back like a figure eight, then dip it in the flour.
Continue doing this until the syrup separates thinly like a thread.

Completion
Place a layer of rice paper on a plate. Add a little shredded coconut on top. Put the candy floss on next. Then sprinkle a bit of crushed peanuts along with some condensed milk. Finally, add another layer of rice paper on top and fold it in half, and it is ready to serve.

Final Product
The crispy rice paper with the chewy cotton candy layer. When eating, you will feel the crunchiness from the grated coconut, along with the nutty flavor of roasted peanuts balancing the sweetness of the cotton candy, which will make you very delighted.
