How to prepare Falafel – chickpea fritters

  • Prepare the ingredients

    Chickpeas should be soaked overnight for at least 8 hours or boiled for about 30 – 45 minutes to soften them. After that, drain the chickpeas.

    At the same time, finely chop the onion, garlic, and cut the coriander into pieces about 3 cm long.

  • Blend the falafel mixture​

    Using a blender, gradually add the ingredients: chickpeas, garlic, onion along with the prepared spices, and press the blending button until smooth.

    Once the mixture is nearly smooth, add the parsley and blend for another 1 – 2 minutes to ensure all ingredients are well combined, then turn off the machine.

    Next, transfer the mixture to a bowl, then use a spoon to press it down firmly at the bottom of the bowl. Finally, use food wrap to cover tightly, then place it in the refrigerator for about 60 minutes.

  • Shape the falafel balls

    Wash your hands clean, then take the chickpea mixture out of the fridge to start rolling it into round balls, bite-sized.

    You can use a tablespoon to scoop a suitable amount of the mixture, placing it in the palm of your left hand (at this point, your hand should be slightly cupped to hold the mixture).

    Next, use your right thumb and index finger to shape the mixture by pressing from the palm to the tips of your fingers. Remember, during the shaping process, you should rotate the ball in the palm of your hand to make it round.

    Alternatively, you can place a suitable amount of the mixture in the palm of your left hand, then gently roll it with your right palm in a clockwise direction to shape the falafel ball.

  • Fry the falafel

    Put a pan on the stove, add oil until hot (bubbles should start to appear), then add the falafel balls one by one.

    Use chopsticks to stir the falafel; when the outside turns a nice golden color, remove them and place them on a plate lined with paper towels, or a basket to drain the oil.

    Note: Do not fry too many falafel balls at once to avoid breaking them. Instead, consider the number of balls to fry.

  • Make falafel dipping sauce (if desired)

    You can make Hummus sauce – this is one of the popular dips in Middle Eastern countries, suitable for serving with falafel (chickpea fritters). The taste of this sauce is tangy and very nutritious, similar to when you use Mayonnaise.

    Depending on the local taste, the recipe for Hummus sauce varies, but it basically includes:

    • Softened chickpeas (about 100 – 200 grams) + garlic (2 cloves) + tahini (3 tablespoons) + lemon juice (2 tablespoons) + olive oil (2 tablespoons) + cumin powder (1 teaspoon) + chickpea cooking water (just enough to make the mixture thick) + a little salt and black pepper.
    • All blended using a blender, then poured into a bowl for serving.

    If you don’t have time, you can also enjoy chickpea fritters with chili sauce, ketchup, and mayonnaise, which is already very delicious!

  • Prepare the ingredients

  • Make chickpea patties

    You put 100 grams of chickpeas, 5 grams of seaweed, 1/2 onion, 15 grams of dill, 1/2 chili, and 3 lime leaves into the blender.
